Harvesting oats?

Question

I have something growing all along beside the feeding trough where I fed sheep last winter. I feel sure it must be oats. Anybody here with any information about when and how to harvest them, either to use myself in the kitchen, or to save as sheep feed for next winter?

I would look it up to be sure it is oats.  Oats are harvested when they are brown and dry.  Just cut off the seeds and remove the hulls.
