Has anybody got any good recipes for chicken breast?

I have some chicken breast in my freezer and I'm running out of interesting ideas on how to cook it.

any suggestions?

  1. I like using chicken breast for meat in spaghetti instead of hmbrg or cook chicken breast and dice it up make stove top as box states and place in a casserole dish add 1 can cream mush soup and half can water and chicken and green beans, this is my husbands favorite.


  2. Cajun chicken fingers

    4 chicken b*****s, cut into strips

    1-2 thumbs ginger, very finely minced

    1 green onion, finely minced

    garlic, as preferred(paste)

    *Marinade chicken in everything, season with salt and pepper. (30 minutes)

    Batter:

    240g. flour

    240g. milk

    1 egg beaten

    juice of half a lemon

    Bread crumbs

    *Dip chicken in batter and roll in bread crumbs. Deep fry.

    Serve with:

    Honey mustard sauce

    1 tbsp. mustard

    2 tbsp. honey

    1 cup mayo

    serve with pasta or potatoes anything you like!

  3. maybe try some continental simmer sauces with your chicken, cut into cubes first, cook chicken in a pot, when they start to simmer a bit, pour the sauce on them. not hard. unlike other chicken recipes.

  6. JERK CHICKEN

    (A spicy Caribbean recipe)

    Preparation time overnight  



    Cooking time 10 to 30 mins.  



    Ingredients

    6  chicken b*****s

    For the Jerk Sauce:

    225g/8oz onions, quartered

    2 habaneros or scotch bonnet chillies, halved and seeded

    50g/2oz fresh root ginger, peeled and roughly chopped

    ½ tsp ground allspice

    the leaves from 15g/½oz fresh thyme sprigs

    1 tsp freshly ground black pepper

    120ml/4fl oz white wine vinegar

    120ml/4fl oz dark soy sauce

    Method

    1. Put all the ingredients for the jerked sauce into a food processor and whizz until smooth.

    2. Place the chicken in a large shallow dish, pour over the sauce, cover and leave to marinate in the fridge for 24 hours, turning the chicken every now and then.

    3. Barbecue the chicken b*****s over medium-hot coals for 25-30 minutes and the wings for 20-25 minutes, basting now and then with the leftover sauce. As it cooks the thick sauce will go quite black in places, but as it falls off it will leave behind a really well flavoured, crisp skin, with lovely moist tender meat underneath.

  8. Place in an ovenproof dish, pour a tin of condensed mushroom sauce over them and bake in the oven approx 1 hour or until chicken is tender.

    Or

    Dice chicken brown in a large frying pan with chopped onion & garlic.

    Add chopped red, green, yellow & orange peppers, cook until soft.

    Pour a tin of chopped tomatoes in the pan with a glass of white wine(optional)

    Add choice of fresh herbs.  Coriander & basil are nice.

    Add frozen peas & sweet corn and sliced mushrooms.

    Stir in teaspoon red or green pesto

    Simmer until everything is cooked and the sauce reduced.

    Cook pasta in salted boiling water with a little olive oil. (we prefer fresh pasta only needs cooking for about 5 to 10 minutes till soft.

    Drain and rinse in colander with boiling water.

    Add to chicken and sauce, mix well.

    Serve onto warm plates.

  9. You can do anything with chicken breast! Here's just a personal favourite:

    In a pan, mix some water, soy sauce, and mirin (Japanese cooking sake-- if you don't have this or can't get it, some white wine and sugar makes an okay substitute) so that it's about a quarter inch deep. I tend to use a more or less equal amount of soy sauce and mirin, with about the same water, to start. Heat it to simmer and set the chicken b*****s in. Turn them occasionally. The soy sauce/mirin mix will simmer down and turn to sticky goo: this is good, but add more water if it looks like it's drying out. When it's done, slice it and serve it on top of good noodles or in soup or some other way that you like.

  10. I just discovered this...I marinated the chicken breast in Kraft Tuscan Salad Dressing and grilled....it was ssoooooooo delicious!
