Has anyone ever been to Flam's restaurant in Paris, France?

Can you tell me what the name is of the pizza-like dish they serve there? We had it a few weeks ago when I was there and it was delicious! I'm doing a photo album of my trip and I'd like to know the name. Thanks!

  1. I've been to Flam's in Strasbourg...I think you are referring to "tarte flambée", an Alsatian specialty. Here's a picture

  2. The dish is known in French as "tarte flambée", but actually it is a specialty from the Alsace region in Eastern France, where it is known as "Flammekueche".

    Ten years ago, it was virtually unknown in other regions. Flam's is the brand of a restaurant chain that set up to spread the concept.

    If you want to taste it at home, it is very cheap and easy to make: take or make pizza dough, make it very thin and square-shaped, apply some fresh cheese ("fromage blanc" in French, I don't know under which name you'll find it), thin onion half-slices, small bacon strips.

    Bake about 15 minutes in a hot oven (240°C).

    That's it!

    You may add some grated cheese on top, but that's not a must.

    Best to have it with fresh green salad and a (real) French dressing, i.e. 2/3 oil and 1/3 wine or cider vinegar, plus a dash of hot mustard.

    I used to like Flam's restaurants, that were both affordable and offered original food, but have to say that they have degraded over the years.

    Like most food chains, they have raised their prices since the change to the Euro, but they have mostly adjusted their margins by reducing the size of portions served and their overall quality. The flammekueche you ate were probably smaller and had less fixings than the ones I enjoyed back in 1998.
