Has anyone ever smoked a buffalo/bison shoulder roast?

I want to cook it in my charcoal side box smoker. How long should I smoke it for and what temp should it reach?

  1. I tried but I couldn't keep it lit.


  2. Smoke seasoned roast for at least 3 hours or even longer for a more smoky flavor.  You know it's ready when the internal temp reaches 155F-165F.  Can I come over for dinner?
