Has anyone got a tried and tested cevieche recipe? (UK ingredients if possible)?

  1. 4 limes, juiced

    Salt

    300g fresh snapper, sea bass or salmon fillets

    3 tbsp canned coconut cream

    Mix the juice of the limes with a little salt. Cut the fish into strips and marinate in the lime juice for 2-3 hours until opaque.

    Stir in the coconut cream and serve.

I use whatever white fish the fishmonger has left, cod, coley, plaice etc. Cut it (raw) into bite size portions, add sliced red onion, bit of garlic, some diced chili peppers, lots of chopped coriander leaf and tomatoes. Then squeeze on enough lime juice so everything gets covered and leave in the fridge for at least a couple of hours. I think it improves after a day or so - if it hasn't all been eaten. Serve with tortilla chips

    But that's just me. Ceviche (the most common spelling) is eaten all over South America and each region does it differently. If you're preparing it to impress a Peruvian for example, best to look for a recipe from Peru as it would be quite different from a Mexican's expectation of ceviche, especially where the side dishes are concerned - some places they eat it with popcorn!
