  2. This is my favorite guac recipe.  The peas add a touch of sweetness.  :)

    Ing:

    1 cup fresh shelled green peas (about 3/4 pound)

    1 large ripe avocado, peeled and seeded

    1/3 cup minced green onions

    1/4 cup bottled salsa

    1 1/2 tablespoons fresh lime juice

    1 teaspoon hot sauce

    1/2 teaspoon ground cumin

    4 cilantro sprigs

    2 garlic cloves

    84 baked tortilla chips

    Steam peas, covered, 4 minutes or until tender. Combine peas and next 8 ingredients (peas through garlic) in a food processor or blender, and pulse until just combined. Serve guacamole with tortilla chips.

    Note: Frozen green peas may be substituted for fresh.

  3. I don't have the exact recipe, but the brand I like is "Wholly Guacamole" - to me, it tastes better than anything I could ever make! haha :)

  4. i make a spicy one with not so much cliantro in it...i dont like to much

    2 ripe avacados

    1 lime juiced

    1 tsp chopped cilantro

    1 tsp salt n pepper

    1 tsp garlic powder

    1 tsp chopped jalapeno

    1 small tomato diced

    Mash avacodos then add the rest

    Chill with plastice wrap on top of guacamole until ready to eat

    1 large avocado, scooped out of shell and mashed

    2 tablespoons sour cream  

    1 garlic clove, pressed

    2 tablespoon sweet onion, finely diced

    1 teaspoon cilantro

    1 tablespoon tomato, finely diced

    2 teaspoon fresh lemon juice or lime juice

    When I can't make it home made our Local SafeWay carries a mix/powder that you can add to avacado and store in the fridge overnight so the flavors mix/marry well.  I actually like it better than homemade but then I have to wait overnight and I can't usually wait :)

  6. Guacamole -- DELISH!!!

    INGREDIENTS

    3 avocados - peeled, pitted, and mashed

    1 lime, juiced

    1 teaspoon salt

    1/2 cup diced onion

    3 tablespoons chopped fresh cilantro

    2 roma (plum) tomatoes, diced

    1 teaspoon minced garlic

    1 pinch ground cayenne pepper (optional)

    DIRECTIONS

    In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.

  8. I make a few different variations- i'd say the easiest is:

    3 avocados, mashed

    2 tablespoons of medium chunky salsa

    juice of 1 lime

    2 cloves garlic, minced

    and about 1/4 cup minced onion

    a tbsp of fresh chopped cilantro

    a little salt & pepper.

    Guacamole

    4 ripe Haas avocados

    3 tablespoons freshly squeezed lemon juice (1 lemon)

    8 dashes Tabasco sauce

    1/2 cup small-diced red onion  (1 small onion)

    1 large garlic clove, minced

    1 teaspoon kosher salt

    1 teaspoon freshly ground black pepper

    1 medium tomato, seeded, and small-diced

    Cut the avocados in half, remove the pits, and scoop the flesh out of their shells into a large bowl.  Immediately add the lemon juice, Tabasco, onion, garlic, salt, and pepper and toss well. Using a sharp knife, slice through the avocados in the bowl until they are finely diced. Add the tomatoes. Mix well and taste for salt and pepper.

  11. Perfect Guacamole Recipe (Serves 4)

    Ingredients:

    2 ripe avocados

    ½ red onion, minced (about 1/2 cup)

    1-2 serrano chiles, stems and seeds removed, minced

    2 tablespoons cilantro leaves, finely chopped

    1 tablespoon of fresh lime or lemon juice

    1/2 teaspoon coarse salt

    A dash of freshly grated black pepper

    1/2 ripe tomato, seeds and pulp removed, chopped

    Garnish with red radishes or jicama. Serve with tortilla chips.

    Directions:

    1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (See How to Cut and Peel an Avocado.)

    2 Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours.

    Keep the tomatoes separate until ready to serve.

    Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste.

    3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.

    4 Just before serving, add the chopped tomato to the guacamole and mix.

    Variations

    For a very quick "guac" just take a 1/4 cup of salsa and mix it in with your mashed avocados.

    You don't need to have tomatoes in your guacamole.

    To extend a limited supply of avocados, add either sour cream or cottage cheese to your guacamole dip.
