Question:

Has anyone got an easy buttercake recipe?

I'm just after a butter cake recipe... I'm in australia... so nothing like shortening or baking soda etc, as we just use Self raising flour etc... I don't mind other things like creaming butter and sugar together that's no worries...

  1. Ingredients

    125 g butter or margarine

    1/2 cup caster sugar

    2 eggs

    1 teaspoon vanilla essence

    2 cups self-raising flour, sifted

    1/2 cup milk

    Directions

    1Cream butter and sugar until light and fluffy.

    2Add eggs one at a t ime beating well after each addition. Add vanilla essence. Beat.

    3Fold flour into creamed mixture alternating with milk, beginning and ending with flour.

    4Spoon into greased 20cm square cake tin.

    5Bake in moderate oven (180 degrees C) for 35 to 40 minutes until skewer inserted into centre comes out clean.

    6Allow to cool in tin 5 minutes before turning out. Cool completely before icing.


  2. Easy Butter Cake Recipe

    Ingredients:

    1 package Yellow Cake Mix

    1/4 pound Butter -- Melted And Cooled

    2 Eggs -- slightly beaten

    ***Filling:***

    8 ounces cream cheese -- Softened

    1 pound Powdered sugar

    1 1/2 teaspoon Vanilla

    Combine cake mix, butter and eggs together in medium mixing bowl until crumbly but moist. Pat mixture evenly over bottom of a lightly greased jelly roll pan. Preheat oven to 350F degrees and prepare the filling.

    Filling: Combine cream cheese, sugar and vanilla in 2-qt bowl, beating with mixer on medium speed until smooth. Pour over cake mix layer. Place on center rack of oven and bake for 30 to 35 minutes or until golden brown and top looks dry. Cool in pan on rack 1 hour. Cut into squares and refrigerate
