  1. Bouquinistes (Les)

    53, quai des Grands-Augustins

    Paris

    Tel: (011-33-1) 43 25 45 94

    Location: on the Left bank 2 blocks off of Notre Dame & Ile St. Louis

    Metro: St. Michel (4), Odeon (4,10)

    Cost         $58

    Owned by Guy Savoy, this "upbeat" New French remains "a busy place filled with smart foodies" who appreciate the "unusual", even "audacious" eats served in a "streamlined" "light room" "overlooking the Seine" in Saint-Germain; but a fair number of foes fume it "feels like it's lost its freshness" - "they're too interested in turning the tables over" to the "tourists who overrun" it, making it "definitely overpriced";

    all agree about the "accommodating service", however.

    On my regular restaurant list, I never fail to visit Bouquinistes as they have very inventive dishes from Chef Guy Savoy.

    Many of their dishes incorporate wonderful "frothy" light sauces, as well as extremely innovative soups and purees.

    Some favorites:

    * Cream of chestnut soup with wild mushrooms and a lyon sausage brioche.

    * Wild fowl and foie gras pate, cooked in a terrine with pears cooked in Sezchuan pepper and bitter lettuce salad

    * Royal dauarade lemon-thyme with wild mushrooms and sweet pumpkin

    .....and so much more, the menu changes regularly

    A bit on the pricey side, but the quality of the food is phenominal.
