  1. Hey, i LOVE it! My grandma who passed away a few years ago used to cook it for me...

    BTW, you should certainly go, eat it in Uzungöl area in Trabzon. There is a special restaurant where it is cooked so well.

  4. Kuymak is a Blacksea specialty. I have seen a similar thing on an Italian cooking program. As a matter of fact, I have seen something similar to Karalahana Soup on the same program. Maybe Italians and Maçka people are related somehow? :D

    Jokes aside, the kuymak I know from Maçka is as follows:

    Ingredients, butter, corn flour roasted in an oven and a special Maçka peynir called Mintzi. You may try yellow sheep cheese (kaşar) instead.

    You boil water in a pot. When it is boiled, you add a big chunk of butter and some salt. After that, you add flour little by little, stirring all the while. When the flour mixture gets a soft paste like structure, you let it boil, never ceasing to stir (or you will burn the bottom). After some cooking like this, you turn off the fire, add the cheese and stir some more. You shouldn't put the cheese while the mixture is on the fire, because the cheese will melt all away and you won't get the gum like quality that is required of kuymak.

    This was the Maçka style. Regions have slight differences in similar dishes.

  5. I was thinking "how the h**l i don't know a food called kuymak, i should be ashamed that i have blacksea ancestors. But then reading answers,i understand it is mıhlama.

    It's a very nice dish and mostly called "mıhlama" instead of kuymak.
