  1. Yep, "pinoli" come from Pine cones. Dirt cheap in Italy. The nearest you can get are Walnuts, or  Cashew nuts, if not even ground Hazelnuts or unsalted Peanuts (not recommended),  but as the others said don't exagerate, you'll over flavour.

  2. When I make a lamb roast I place parsley-walnut pesto inside.  It gives it a great flavor.  Here are three recipes:  http://www.bellaonline.com/articles/art4...

You can also make a sage-Gorgonzola pesto:  http://www.bellaonline.com/articles/art4...

As stated above pine nuts do come from pine cones.

  3. Pine nuts actually do come from pine tree cones, and are usually toasted when making pesto.

Almost any nut can be used, but  like "hazelnuts" ground, when I cannot get pine nuts.

Be carefull with the amount of other nuts used, because you really don't want to overpower the pesto with any nut flavor.

I know there are  sustitute recipe'  on the net, just look on google for other nuts used.

  4. The flavor of pine nut in pesto sauce is actually quite subtle. I think its main role is to bind the crushed basil and to give the sauce a stronger texture. I suggest replacing it with small quantity of hazelnut softened in a bit of boiling water and dried. Walnut will do too but it has a slightly bitter taste.

  5. yes

    taste good

    yes pine cones.
