I'm looking to grill tonight for dinner and wanted to whip up a pretty easy buffalo chicken recipe.

  2. Make up a sauce of Franks red hot sauce (1 bottle) 2 tbsp butter, 1-2 tsp italian seasoning, 1 small garlic clove chopped. Heat in a sauce pan.



    Mariante the chicken in about 1/3 or 1/2 the hot sauce for about 20 min. Throw the b*****s on the grill and cook thru. Toss again in the hot sauce if desired. Serve with ranch or blue cheese dipping sauce on in a sandwich with lettuce, tomatoes, and bluecheese or ranch dressing on the breast then topped with the bun.

    Either melted blue cheese or povolone would be good on this as well. If you use blue cheese to melt though then just use ranch for sauce.

    Or make it into a wrap.

    4 boneless skinless chicken b*****s

    1/2 cup franks red hot buffalo sauce or regular franks red hot

    1 cup and 1/2 cup flour

    1 tsp pepper

    1 tsp salt

    1 tsp paprika

    2 tsp garlic powder

    4 cups ranch potato chips

    1 egg

    1/4 cup milk

    1 tsp Tabasco sauce

    Directions  

    Trim fat from chicken and rinse- pat dry

    Marinate chicken in a ziplock bag with franks red hot sauce for 2-3 hours in fridge, add 2 tbsp taco seasoning for more flavor

    Preheat oven to 400 and lightly oil glass baking dish

    Combine 1 cup flour, salt and pepper

    Crush potato chips

    In a different bowl or bag, combine remaining 1/2 cup flour, crushed chips, paprika and garlic powder

    Make an egg wash out of the egg, milk and Tabasco sauce

    Remove chicken from marinade and wipe excess sauce as you removeit from the marinade bag, discard marinade

    Dredge chicken breast in salt+pepper flour

    Dip in egg wash

    Toss in potato chips mixture and lay in baking dish

    Repeat for each chicken breast

    Bake in oven for 25-30 minutes, or until outside is light brown + crispy and juices run clear

    top each one with a slice of pepper-jack cheese in the last 5 minutes and served with extra franks red hot on the side
