and/ or

Trail Mix?

As far as trail mix goes, I like to contribute raisins into the picture.

  1. 2 cups granola  

    3/4 cups coarsely chopped pecans

    3/4 cups coarsely chopped walnuts

    1 (3 1/2-ounce) can flaked coconut (1 1/2 cups)

    1/2 cup sunflower seeds (meat only)

    1/2 cup wheat germ

    1 teaspoon ground cinnamon

    1 teaspoon salt

    1 (14-ounce) can sweetened condensed milk

    1/4 cups vegetable oil

    1 cup banana chips (optional)

    1/2 cup dark raisins

    1/2 cup golden raisins

    1/2 cup dried cherries

    1/2 cup dried apricots, diced

    Preheat oven to 300 degrees F.

    In large mixing bowl, combine all ingredients except banana chips and raisins, cherries and apricots. Mix well. Spread evenly in an aluminum foil-lined baking sheet. Bake 55 to 60 minutes, stirring every 15 minutes. Remove from oven; stir in banana chips, raisins, cherries and apricots. Cool thoroughly. Store tightly covered at room temperature.

    INGREDIENTS

    1 cup combination diced dried fruit, such as prunes, apricots, pears and apples

    1/2 cup raisins and/or dried cherries or cranberries

    1 1/2 cups unsalted sunflower seeds

    1 cup unsalted dry-roasted peanuts (or honey-roasted peanuts, chopped walnuts or unsalted almonds)

    DIRECTIONS

    Mix all. Makes 4 cups.

    Trail Mix Sandwiches --

    INGREDIENTS

    1 (8 ounce) package cream cheese, room temperature

    1 tablespoon lemon juice

    1 teaspoon finely grated lemon zest

    1 carrot, peeled and grated

    1/2 cup raisins

    1/3 cup coarsely chopped trail mix

    8 slices whole wheat bread

    DIRECTIONS

    Place cream cheese in a bowl. Add lemon juice and zest, raisins, shredded carrot, and chopped trail mix; stir until well blended and creamy. Spread between 2 slices of bread, and wrap up for the trail.

    Trail Mix Muffins --

    INGREDIENTS

    2 1/4 cups all-purpose flour

    1 cup granola without raisins

    3/4 cup packed brown sugar

    2 teaspoons baking powder

    1/2 teaspoon salt

    2 eggs

    1 cup milk

    3/4 cup vegetable oil

    1 teaspoon vanilla extract

    1/2 cup miniature semisweet chocolate chips

    1/2 cup chopped dry roasted peanuts

    1/2 cup raisins

    1/2 cup chopped dried apricots



    DIRECTIONS

    In a large bowl, combine the flour, cereal, brown sugar, baking powder and salt. In another bowl, beat the eggs, milk, oil and vanilla; stir into dry ingredients just until moistened. Fold in the chips, peanuts, raisins and apricots.

    Fill greased or paper-lined muffin cups three-fourths full. Bake at 375 degrees F for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

    INGREDIENTS

    8 cups rolled oats

    1 1/2 cups wheat germ

    1 1/2 cups oat bran

    1 cup sunflower seeds

    1 cup finely chopped almonds

    1 cup finely chopped pecans

    1 cup finely chopped walnuts

    1 1/2 teaspoons salt

    1/2 cup brown sugar

    1/4 cup maple syrup

    3/4 cup honey

    1 cup vegetable oil

    1 teaspoon ground cinnamon

    1 teaspoon vanilla extract

    2 cups raisins or sweetened dried cranberries

    DIRECTIONS

    Preheat the oven to 325 degrees F (165 degrees C). Line two large baking sheets with parchment or aluminum foil.

    Combine the oats, wheat germ, oat bran, sunflower seeds, almonds, pecans, and walnuts in a large bowl. Stir together the salt, brown sugar, maple syrup, honey, oil, cinnamon, and vanilla in a saucepan. Bring to a boil over medium heat, then pour over the dry ingredients, and stir to coat. Spread the mixture out evenly on the baking sheets.

    Bake in the preheated oven until crispy and toasted, about 20 minutes. Stir once halfway through. Cool, then stir in the raisins or cranberries before storing in an airtight container.

    INGREDIENTS

    4 cups old-fashioned oats

    1 cup shredded coconut

    1/4 cup packed brown sugar

    1/4 cup vegetable oil

    1/4 cup honey

    1 teaspoon ground cinnamon

    1 1/2 teaspoons vanilla extract

    1 cup raisins

    DIRECTIONS

    In a large bowl, combine oats and coconut; set aside. In a saucepan, combine brown sugar, oil, honey and cinnamon; bring to a boil. Remove from the heat and stir in vanilla. Pour over oat mixture; stir to coat. Spread in a large shallow baking pan. Bake at 350 degrees F for 15 to 20 minutes, stirring occasionally. Cool. Add raisins. Store in an airtight container.

    Playgroup Granola Bars --

    INGREDIENTS

    2 cups rolled oats

    3/4 cup packed brown sugar

    1/2 cup wheat germ

    3/4 teaspoon ground cinnamon

    1 cup all-purpose flour

    3/4 cup raisins (optional)

    3/4 teaspoon salt

    1/2 cup honey

    1 egg, beaten

    1/2 cup vegetable oil

    2 teaspoons vanilla extract

    DIRECTIONS

    Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13 inch baking pan.

    In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan.

    Bake for 30 to 35 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.

  4. Throw in all the things that you like. this way, you dont have to pick around the ones you dont like. BE CREATIVE.

  5. I just use dry-roasted peanuts & almonds, with dried tropical fruit bits.  I prefer Craisins or white raisins, rather than the dark ones.  In the winter, I'll add yogurt or chocolate-covered raisins (but they get too melty in summer).........
