Deeper'n'ever Pie is a large baked dish consisting of turnips, potatoes, beets, and beans. It is often served with a tomato chutney, and a very filling dish. This was served regularly during Redwall feasts. INGREDIENTS (to serve four) one lb (450g) of potatoes half lb (225g) of carrots half lb (225g) of turnips (or swedes) 2oz (50g) of cheddar cheese (or any favorite hard cheese) 3oz (75g) of butter salt and pepper to taste METHOD Wash and peel all the vegetables. Cut into small pieces. Put the potatoes into one pan and the carrots and turnips together into another. Cover with water, add a little salt and boil until tender. Drain, then add half of the butter to each pan and mash the vegetables till they are smooth. In a deep pudding dish, layer the vegetables alternately finishing with potatoes. Roughen the top layer with a fork. Grate the cheese and sprinkle over the top of the pie. Put the pie onto the top layer of the oven and bake for 15 minutes on 180°C.

  1. Filling:

    4 Lg Potatoes, peeled, cut into quarters, cooked and mashed

    2 Sm turnips* peeled, cut into quarters, cooked and mashed

    2 Beets* boiled in their skin until tender, cool, peel, and slice thinly

    1 Lg Onion, sliced and sauteed in butter

    1 Cup (or more!) of cheese, grated

    Make a crust for a covered pie. Roll out bottom crust and fit into pie plate. (9x9) Put half of the cheese over the bottom crust. Mix potatoes and turnips* together and add 1 Tbsp of butter and 1/4 cup of milk. Put half of this into the pie crust. Mix all the beets* and onions together and put on top of the potato and turnip mixture. Then put the rest of the turnip and potato mixture on and the rest of the cheese. Put the top crust on with an attractive edging and slits so steam can escape. Bake at 375 degrees for 35-40 minutes or until crust is browned.

    *Don't worry if you don't like turnips! You can't even taste them.

    *If you don't like beets, consider adding sliced leeks to the onion mixture. Use the green part--- it's the best! Also, add chopped, raw carrots for an exciting crunch!

    *For added flavor, add these spices to both potato and onion mixtures: Basil, Rosehips, Cilantro, and Thyme. If you have Molly McButter butter sprinkles, those are great, too.

    *On top of the pie (once it's out of the oven!) put chopped leeks (cut so they make a circle), grated carrots, sliced leeks (the green part) and cheese to make it look very pretty!
