I have couple question that I can't seem to find the right answer.

what holidays/festivals do they have?

What daily food meal customs do they have?

what kind of specialty dishes does china have?

What typical food/seasoning do they use?

What kind of cooking/food terms do they have?

Holidays: almost all major holidays in China are celebrated using the Chinese calendar, not the western one.

-Chinese New Year is obviously a big one, about family reunion and filial piety, and runs for 15 days--the 15th day is called YuanXiao.

-April 4th/5th [Chinese calendar] is QingMing Festival, a day where people tend to the graves of the dead-- "sweep the grave", etc

-May 5th [Chinese] is DuanWu festival in rememberance of Qu Yuan, and involves dragon boat racing and eating ZhongZi.

-June 1st [Western calendar] is Children's Day =D!

-July 7th [Chinese] is QiXi, the Chinese equivalent of Valentine's day, the day where two stars [lovers] in heaven are able to meet for one day.

-August 15th [Chinese] is the Mid-Autumn Festival, a day to celebrate unification [usually family and nature] and eat mooncakes.

There are more, but those are the major ones that I remember are celebrated.
