I had canned smoked rattlesnake once when I was in elementary school.  I recall it tasting rather good (smoked meats are pretty hard to mess up IMO) but I also fell pretty ill shortly after so if I was going to eat it again I'd probably be more wary of its packaging and freshness.

I've always wanted to try sake or soju with a snake in the bottle though like the other guy posted.

I have eaten a diamond back rattler. and it does not taste like chicken.
