  1. Spicy Meat Kabobs

    Ingredients:

    1 lb lean ground beef

    1 teaspoon ground dried chile

    1 onion, finely chopped

    1 egg, beaten

    2 tablespoons chopped fresh coriander

    1 teaspoon nutmeg

    salt

    oil, for brushing

    Directions:

    1. Put all the ingredients except the oil in a large bowl and mix together with fork.

    2. Cover and refrigerate the mixture for 1 hour.

    3. Light the barbecue fire or grill.

    4. Divide the mixture into 12 equal portions, shaped each portion into a sausage about 5cm/2inches long, squeezing each sausage firmly to make it as compact as possible.

    5. Brush 4 kebab skewer and push through sausage, moulding them firmly on the skewer.

    6. Brush kebab all over with oil and place on the grill.

    7. Cook kebab over the hot coal for 7-10 minutes, turning frequently.

    8. Serve garnished with lemon slices.

    Spicy Salmon Kabobs

    Ingredients:

    16 oz. fresh salmon, cut into 1 inch chunks

    1 onion, coarsely chopped

    ½ cup sunflower oil

    1 cup pineapple juice1

    ½ cup soft brown sugar

    2 tsp. crushed hot red chilis

    Directions:

    Combine onion, oil, pineapple juice, soft brown sugar and chilis. Add salmon pieces and coat thoroughly. Cover and chill for 5 hours.

    Preheat grill to hot. Using metal skewers, pierce centers of each piece until full. Balance skewers on a grill pan and cook for 5 minutes each side, or until juices run clean. Serve hot with a spinach salad and soft crusty rolls.

  3. Hussaini Kebab Recipe

    Ingredients:  Serves 6

    2 kg (4 lb) leg of lamb, boned

    - Spices -

    1 teaspoon crushed garlic

    11/2 teaspoons finely grated fresh ginger

    1 teaspoon freshly ground black pepper

    2 tablespoons finely ground almonds

    2 tablespoons yoghurt

    1 teaspoon ground coriander

    1 teaspoon ground cummin

    Salt to taste

    2 tablespoons sesame oil

    1 tablespoon lemon juice

    Method:

    Trim lamb, discarding excess fat. Any sinewy bits may be saved for stock or for adding to a curry. Cut the lean meat into 2.5 cm (1 inch) cubes and put into a large howl.

    Combine all the remaining ingredients, mixing well. Marinate lamb in the mixture, kneading the spices well into the meat. Cover and leave for 2 or 3 hours, or refrigerate and leave for as long as 4 days.

    Thread 4 or 5 pieces of meat on each skewer and barbecue over glowing coals or under a preheated griller until crisp and brown all over, turning to ensure lamb is well cooked
