  1. Yes ..... here is one of my favorites ...... = )

    Minestrone Soup with Pasta, Beans and Vegetables

    3 cups reduced-sodium vegetable or chicken broth

    1 (28-ounce) can diced tomatoes

    1 (15-ounce) can white (cannellini or navy) beans, drained

    2 carrots, peeled and chopped

    1 celery stalk, chopped

    1 cup onion, chopped

    1 teaspoon dried thyme

    1/2 teaspoon dried sage

    2 bay leaves

    Salt and ground black pepper

    2 cups cooked ditalini pasta

    1 medium zucchini, chopped

    2 cups coarsely chopped fresh or frozen spinach, defrosted

    4 tablespoons grated Parmesan or Romano cheese

    Basil sprigs, garnish, optional

    In a slow cooker, combine broth, tomatoes, beans, carrots, celery, onion, thyme, sage, bay leaves, and 1/2 teaspoon each salt and black pepper. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.

    Thirty minutes before the soup is done cooking, add ditalini, zucchini and spinach. Cover and cook 30 more minutes. Remove bay leaves and season, to taste, with salt and black pepper. Ladle soup into bowls and sprinkle parmesan cheese over top. Garnish with basil, if desired. Serv with fresh bread and garlic herb butter.

  3. Veggie Chili

    -1 Bag Morningstar farms crumbles (like ground beef but made with soy)

    -2 Cans beans, drained (i use 1 pinto 1 kidney)

    -2 cans diced tomatoes w/ jalapeno

    -1 medium white or spanish onion, chopped

    -3 cloves garlic, minced

    -Chili powder (I don't measure exactly but about 3 tablespoons and then add to taste)

    -Cayenne (1tsp MAX unless you like chili super hot)

    -Garlic powder (about 2 tsp)

    -3 tbsp olive oil

    heat olive oil in pan then add onions and caramelize until clear and smell great, maybe a little golden brown

    add garlic and cook for about 45 seconds more (or else garlic will burn)

    Add beans and let them heat through for about a minute, then add tomatoes. Let bean tomato mixture cook for about 5 minutes season with chili, cayenne, and garlic powder then add soy meat crumbles and let heat through. Enjoy Chili with cheese (if you're not vegan) or just eat it straight!

    TIP- If you want more veg in the chili, add a couple of finely chopped red bell peppers, it adds a lot of flavor and crunch especially if you add them at the end. If you like your chili less spicy use one can of diced tomatoes with peppers in them and one without.

  4. Very simple recipe for vegetarian burritos... (if you like Mexican food of course!)

    Buy one bag of Morningstar Farms ground beef

    Put into a medium-sized plastic bowl, fill with warm water (to let defrost)

    Strain the beef

    Add taco seasoning (any type will do)

    Put into microwave for 4 minutes (may be a little more or less depending on your microwave)

    Warm up some flat bread in the microwave til it gets warm

    Take the beef out of the bowl as desired and put into flat bread

    Add some lettuce, diced tomato, shredded cheese, hot peppers, etc.

    Voila... it's ready in less than 5 minutes!!!

  5. Coconut Curry, super easy.

    Just saute an assortment of veggies (broccoli, cauliflower, and chopped carrots work best but feel free to experiment) and add one cup of coconut milk and 1 tbsp of curry powder (or more if you like it a little spicier). Serve over basmati or jasmine rice
