    I had boudin once! and I loved IT!

    Actually, Boudin (pronounced BOO-dan)

    describes a number of different types of sausage used in French, Creole and Cajun cuisine.

    There are also variations to " Boudin"

    ===Boudin blanc ===

    A white sausage made of pork without the blood.

    In some versions, the sausage is made from a milk or pork rice dressing, much like dirty rice, only more moist, stuffed into pork casings.

    ===Boudin blanc de Rethel===

    a traditionally made version, which may only contain pork meat, fresh whole eggs and milk, and cannot contain any bread crumbs or flours/starches is protected under EU law with PGI status.

    ===Boudin noir ===

    A dark-hued French blood sausage or Cajun sausage containing pork, rice, pig blood, and other ingredients.

    ===Boudin rouge ===

    In Louisiana cuisine, a sausage similar to boudin blanc, but with pork blood added to it. It originated from the French boudin noir

    These are some variations.

    They are very tasty and a must have when in Louisiana!

  3. Yes this is a French and as such a Cajun (Cajuns are originally from France, then Canada and now Lousiana and a small part of Texas usa) kind of sausage.

    The one I used to get was cooked rice, cooked pork and spices stuffed into a natural sausage casing and was really good. I especially like the one that had a lot of Cayane pepper in it. So spicy and so good. lol

    There are as many kinds of Boudin as there are cooks and they can be made from any number of fillings.

    Beware! Some of the very old school kind are made with pigs blood! (Not even legal in the U.S.).

  8. I have, when we went to Louisiana on a trip. I can't speak for all Boudin, but the spicy cajun ones we had were delicious!
