Have you ever eaten russula mushrooms picked from the wild?

I've been trying to identify them for a while. I know they're largely edible but wondered how good they were for culinary use and if they were commonly used by anyone.

  1. There are 4 edible types of Russula .

    Small Yellow Russula.

    Russula xerampelina.

    Bared Teeth Russula,

    Russula atropupurea. that's 4 out of the 18 varieties found in the uk. 2 are actually poisonous the

    I do eat a lot of wild fungus. I love the whole thing of the search and discovery as much as the eating. I did once find Chantrells in Hampshire (not the New Forest) and regulaly eat Giant Puffball. Nothing quit like it on earth fried in butter!!!. Great in Rissottos too.

    Some of the jelly fungus (Jew's Ear) make great stock mushrooms. They add a thickness to sauces with a delicious mushroom flavour.

    One word of warning. There are a LOT of things out there that will make you ill even KILL YOU!

    even the innocent  Shaggy Inkcap. The Common Ink Cap is fine but if you eat a Shaggy ink Cap and drink alcahol you will throw up....big time.

    It's worth investing in a really good book.
