  1. I am a former chef and have not only eaten it Ihave cooked it in a number of place, true it can be either duck or gooses livers and they are well fed to produce the overly large livers they get, but the whole duck is used there just not tossed out after the are culled for there livers.

    It come whole or in many other forms and can be made into pate, terrines or sliced and cooked like chicken livers or calves liver in a pan on the stove.

    It has a creamy livery taste, you cannot get away from that flavour, and we served it with a variety of sauces and garnishes, I agree it is not obtained in a cruel free manner, but they have been harvesting the livers this way in Europe since ancient roman times.


  2. it is duck liver with a variety of fillings (possibly) very high scale sort of thing.

    the ducks are fed till their livers burst and then they die, thats wen they pull the liver out and cook it soehow.

    it is an insanely cruel way of treating animals so i suggest you do not try it!

    It is actually Goose liver, it is a wonderful moment, which means, yes I have tried it. there has been alot of news over the past several years, that the geese in question are "force fed" to make thier livers fatter. I say try it if you are curious, I know I would. Cheers

In just a few weeks, their livers swell up to ten times their normal size, and the birds can scarcely stand, walk, or even breathe. At this point, they are slaughtered, and their livers are peddled as a "gourmet" delicacy.  This information is standard knowledge in the culinary world.

    No, I haven't tried it...on principle.  I've never liked liver much anyway.

It is duck liver but it has gelly like consistency of fat.  I have tried it a few times, but actually it is considered a cruel thing to eat because to make foir gras ducks are force fed through tubes so they can be extremely overweight and thus have hughe fatty livers.  It is considered a high end food and is generally very expensive. It does not have much flavor and is almost unpleasant.  The best part about it is just the snob factor.

  6. no. please avoid it - it's the enlarged liver of goose. the animals are force fed so that that they get sick and their livers get big. it is horrible animal torture.
