  1. i used to live in south ga too  and i love all greens as well.  They are  great,  mustard greens, turnip greens, collards, kale, any of it and sooooo good for you.


  2. Make them all the time, love it.

    Great way to cut the bitter taste:

    In large stock pot heat equal parts olive oil (or pork fat like bacon grease) and corn syrup with a few drops hot sauce. Throw in a little white wine or red cider vinegar. Saute chopped onions and garlic. When onions are clear add greens, stir, reduce heat. Allow to wilt.

    Also be sure to remove most of the ribs.

Collards are wonderful!  They might be kind of bourgeois for some folks, but I like them.  We've grown them a couple years in a row and they did fairly well.  I usually cook them for a long time in a little water, some onion, a little garlic, salt, pepper, and vinegar.  Or even better, with some Anntony's Carribean Sauce.  Oh man, I'm hungry now.  I think I need to go and get me some greens!  (Anntony's is spelled correctly; if you can find it it's fantastic on everything.)

  11. Yes and yes. Being a dark green leafy veggie they are not only good but also good for you. I have some planted in my garden.
