  1. It has more flavour than regular prosciutoo, we used when I was a chef in Northern Italian dishes at one of the hotel restaurants at that time were specializing in that part of Italian cuisine.

    It is actually nicer for Carbonara sauce than pancetta or bacon. In soups, even in a melange of mushrooms both wild and cultivated for a polenta sauce.
