Hollowed out pineapples and/or coconuts filled with flowers would be a nice centerpiece on the tables.

How about Martini glasses filled 3/4 with sand and shells?

You could get round bowls and float candles (like flower shaped...etc  or even tea lights) in it.

You could get coconuts  (Or hollowed out pineapple shells?) and put fake tropical flowers in them.

Or maybe find someone who can make flowers out of fruit.

Make fruit kebobs and stick them into whole, fresh pineapples .....Put big artificial leaves under the food platters and strew lots of little artifical orchids around the table and on the platters ..... Little wooden bowls with chunks of FRESH coconut, macadamia nuts and sugar cane.......Candles scented like coconut or pineapple (soy candles smell the strongest) ... Home Depot has solar tiki torches, if you have something to stick them into:)
