there will be a hawaiian themed potluck at work on thursday. I chose to bring a desert.Any hawaiian desert ideas?

  1. Haupia (Coconut Pudding)

    2 c coconut milk  

    1 c whole milk  

    6 T sugar  

    5 T cornstarch  

    Pour one cup of coconut milk into a saucepan lover low heat. Combine sugar and cornstarch stirring into coconut milk, continuing on low heat stirring consistently until thickened. Add remaining coconut milk and whole milk and continue to heat until thickened.

    Pour into 8 inch square pan and chill until firm. Slice to desired size just before serving.


  2. HAWAIIAN DESSERT SQUARES  

    2 eggs

    3/4 c. sugar

    3 tbsp. butter, melted

    3 1/2 oz. (1 can) coconut

    1/2 c. chopped nuts

    BATTER:

    1 c. flour

    1/2 tsp. baking powder

    1/2 c. soft butter

    1/4 c. brown sugar

    1 egg, beaten

    1 can (20 1/2 oz.) crushed pineapple, drained

    1 tsp. vanilla

    To make topping, beat eggs until light and fluffy. Beat in sugar. Add butter, coconut and nuts. Set aside.

    To make batter, cream butter with sugar. Beat in egg and vanilla. At low speed add dry ingredients, beat just until blended.

    Turn batter into greased and floured 9x9 pan. Spoon drained pineapple over batter, then spread with topping. Bake at 350 degrees for 35 minutes or until golden brown. Cool in pan. Cut into squares.



    Pineapple Upside Down Cake

    The Pineapple Upside Down Cake got its name because the cake is cooked with pineapple on the bottom, but when it is served, the cake is turned upside down, so the pineapple is on the top.

    Ingredients:

    1/4 cup butter

    1/2 cup brown sugar, firmly packed

    1 can sliced pineapple (1 pound, 4 ounce)

    Maraschino cherries (one for each pineapple ring)

    3 eggs

    1 cup granulated sugar

    1 cup flour

    1 teaspoon baking powder

    1/4 teaspoon salt

    Instructions:

    TOPPING: Melt the butter in a 10 inch skillet. Add the brown sugar and cook over low heat, stirring constantly, for about 10 minutes, or until the surface is covered with bubbles. Drain the pineapple, saving the syrup. Lay out the drained pineapple on the brown sugar, and place a Maraschino cherry inside each pineapple ring. Set aside to cool.

    CAKE: Beat the eggs and sugar together until they are light and fluffy. Add 1/4 cup of the reserved pineapple syrup. Sift the flour with the baking powder and salt, and fold flour mixture into the egg mixture. When the brown sugar topping has cooled, and right before you are ready to bake the cake, pour the cake batter into the skillet, covering the brown sugar and pineapple slices. Bake in a preheated 350 degree oven for about 45 minutes. While the cake is still warm, loosen the edges with a spatula and turn the cake over onto a plate, so the brown sugar and pineapple slices are facing up. IMPORTANT NOTE: Do not pour the batter over the sugar and let the mixture sit a while before you bake it. If you do that, the cake will end up being soggy on top.



    Coconut Macadamia Squares

    These Hawaiian style bar cookies have a coffee flavored base and a pecan-pie-like topping made with eggs, brown sugar, coconut, and macadamia nuts.

    Ingredients:

    1 cup butter

    2 cups packed brown sugar

    1 tablespoon instant coffee powder

    1/2 teaspoon ground cinnamon

    1/2 teaspoon salt

    2 cups all-purpose flour

    3 eggs

    2 teaspoons vanilla extract

    2 cups flaked coconut

    2 cups chopped and toasted macadamia nuts

    Instructions:

    Preheat oven to 325 degrees. Grease a 9 X 13 inch baking pan and set it aside.

    BASE LAYER: In a large mixing bowl, beat butter, 1 cup brown sugar, instant coffee powder, 1/4 teaspoon cinnamon and 1/4 teaspoon salt until light and fluffy. Stir in flour 1/2 cup at a time, blending well after each addition. Spread evenly in prepared pan. Bake 20 minutes. Cool in pan on rack 15 minutes.

    TOPPING LAYER: In a large bowl, beat eggs and vanilla with remaining 1 cup brown sugar, 1/4 teaspoon cinnamon and 1/4 teaspoon salt. Stir in coconut and macadamias.

    ASSEMBLY: Spread the toping evenly over the cooled baked layer. Bake 40 to 50 minutes, or until golden brown and firm to the touch. Use a knife to loosen cookies around edges while warm. Cool completely in pan on rack. Cut into 48 (about 1 1/2 inch) squares, cutting 6 strips one way and 8 strips the other way.

  3. Haupia is the most traditional.  I make mine a little different than the recipe noted.

    (Coconut pudding)

    This is a MUST for your lu'au!

    12 ounces Chilled Coconut Milk

    1 1/2 cups Water

    1/2 cup + 2 TBS. Sugar

    1/2 cup + 2 TBS. Cornstarch

    ===

    Combine all ingredients in saucepan.  

    Stir over medium heat until thickened.  

    Lower heat and cook for ten minutes, stirring constantly to avoid lumping or burning.  

    Pout into 8x8 inch dish and chill until set.  Cut haupia into squares.  

    NOTE: May be topped with crushed pineapple, sliced peaches or sliced mango. (not traditional)

    AUNTY MAEBELLE'S

    Haupia Cake

    1 box/pkg. White Cake Mix, any brand

    Make as directed on pkg. (add 1 teaspoon of coconut flavoring - optional)

    Bake in a 9 X 13-inch pan

    Haupia Filling or Frosting

    2 cups coconut milk (I buy mine at 99 Ranch Mkt.; most Asian stores

    have it in the frozen food section. It comes in a plastic bag, if you don't see it, ask.)

    1/2 cup sugar

    1/4 tsp. salt

    3 tablespoons cornstarch

    1/2 cup water

    1 tsp. vanilla or coconut flavoring

    In a saucepan, heat coconut milk. Mix sugar, salt and cornstarch with the water.

    Stir into the coconut milk, cook and stir constantly until mixture thickens.

    Stir in flavoring. Cool until warm

    Poke holes in cake with the end of a chopstick, pour about 1/2 cup of frosting onto the cake,

    and let coconut mixture cool, then frost the entire cake.
