Kalua pig (roasted in an imu), lomi lomi salmon, chicken long rice, Hawaiian sweet bread (King's Hawaiian available in most grocery stores), pineapple and other fresh fruits, coconut, poi (though I don't like it), smoked pork ribs, fresh fish, macadamia nuts, potato salad (a luau staple), taro chips, and on and on.  Yummmmy.

    Honestly, I am from Hawaii, born and raised - depending on what you are looking for, some things are simple to make, others are more complex.  And not all recipes found online are "authentic" - just depends on who's posting.

    When I think of Hawaii foods - I think of poi, kulolo, chicken long rice, laulau, kalua pig, aama crab, fresh pineapple with Hawaiian salt on it, fresh sticky rice with Aloha brand shoyu, sashimi, tako poki, ahi poki, poki aku.  

    Lomi salmon is usually on the "luau" menu, but Hawaii doesn't have salmon, so it isn't a Hawaiian dish.  However, there are many "outside" influences to Hawaii's culture - for example, many asian dishes are also included in the local cuisine.  

    This is mainly in part to the plantation workers - Filipino, Puerto Ricans, Japanese, Chinese, they all came to work the sugar cane plantations.  The would all share their meals, and soon shared a language - "pidgin", a type of creole language created out of a need for all these cultures to communicate with one another.

    So when I think of Hawaii's food, I also think of manapua (char siu bao, or dim sum), saimin (S&S brand is The Best!), furikake and mochiko chicken, sushi, (many okazu places on the islands, all considered to be local foods), local parties also have pancit (Filipino noodles), or chicken adobo (more Filipino), pasteles (Puerto Rican) are often sold from road side sellers, and are completely worth the stop on the side of the highway.

    Our local culture is so entwined with those who worked the plantations, it's no wonder we're called "The Melting Pot" of the Pacific.
