Healthy, low calorie twist on shrimp scampi?

Any recipe for something like shrimp scampi, but without all of the butter, and not just replacing the butter for olive oil.

  1. I season my shrimp with old bay, and either grill it or saute it, then I make a sauce out of white wine, stock, garlic, fresh herbs, and finish the sauce with a little butter.  I'll toss pasta with the sauce, and put the shrimp on top of the pasta, and add a little more sauce.

    Most of the flavor is from the stock, herbs, wine, and garlic then...  with just a little fat to round out the flavors.

  3. the closest you will come to a scampi like dish without all the butter is the weight watchers recipe -

    use a Good Seasons Italian Dressing mix packet to season your shrimp. sautee the seasoned shrimp in a nonstick skillet with one tablespoon olive oil.  toss with angel hair pasta & serve.

    you can add a little minced garlic to boost the "scampi" flavor, and you can go crazy and add a tablespoon of butter to up the flavor as well.
