  2. Onion Soup--

    3 large onions, peeled and sliced thinly

    2 cloves garlic, minced

    6 cups beef stock

    3 cups half and half

    4 oz. finely shredded white cheddar cheese

    Salt and pepper to taste

    Heat a large pot over medium-high heat and add a tablespoon or so of oil. Add onions and  cook until wilted and just beginning to brown. Add garlic and beef stock. Simmer until onions are softened, about 30 minutes. Add half and half and cheese. Stir until cheese is melted thoroughly. Thicken with a roux of flour and water -- pouring roux into pot and stirring constantly so that lumps do not form. Season with salt and pepper once the soup is thickened to your liking.

    Makes 4-6 servings

    Almost Harry Potter Butterbeer

    12 oz lemon-lime soda (like 7UP or Sprite)

    2 tablespoons instant butterscotch pudding mix

    Do NOT add the pudding mix to the soda-it will absolutely fizz out over the top -- I know this, sadly,  from experience. DO put the pudding mix in a large glass and add an ounce or so of the soda to it -- stirring all the while until smooth. Add the remaining soda and drink away! Makes one butterbeer.

    My Hogwarts-Inspired Pumpkin Juice

    5 cups apple juice

    1 cup pumpkin puree

    2 teaspoons pumpkin pie spice

    Combine all in a large pitcher and stir well. I did this and let it sit for an hour or so in the refrigerator and then strained much of the solids from it. It was too thick as is and straining it lessened that. Put it back in the refrigerator until it's ice cold and serve. Makes about 6 cups.

    Pumpkin Pasties Straight From the Hogwarts Express  

    Pie Dough for 2 double-crust pies

    2 cups pumpkin puree

    2 eggs

    3/4 cup brown sugar

    1 teaspoon vanilla extract

    1 teaspoon pumpkin pie spice

    Roll out dough and cut into 5-inch circles. Mix the remaining ingredients together until well blended. Drop 2 tablespoons of filling onto one side of each dough circle. Dampen the edges of the dough with water, fold one side over the other and pinch to seal. Vent by cutting a small slit into the top of each pastie. Brush with beaten egg if desired and place on cookie sheets. Bake at 350 degrees F for 15-20 minutes or until golden. Makes 12-14 pasties.

    Green pepper marmalade/jam

    This is a lovely jam for having on toast. Be sure to chop the green peppers finely

    4 cups of finely chopped green peppers 500 ml sugar

    2 ml salt 2 ml fine ginger

    2 ml mixed spice

    Mix all ingredience in a stainless steel pot and stand for 21/2 hours. Bring to boil for about 40 minutes over a moderate heat until syrup thickens. Remove from heat and bottle while warm in sterilized bottles.
