Healthy Italian Food/ Dishes?

Hi, my Sch is hosting this fund-raising campain and we are gonna sell the food. Anyway, I NEED something Healthy and IT MUST BE HEALTHY, and easy to prepare.

  2. ¾ cup grated parmesan cheese

    Melt butter in saucepan; add flour and cook, stirring, 1 minute.

    Whisk in milk, salt, pepper, and nutmeg. Bring to a boil, whisking. Reduce and simmer, stirring occasionally, for 5 minutes.

    Toss with parmesan and fettuccini, serve immediately.

    Many grocery stores have a variety of pasta which are good for you & the taste is excellent. Also, try making an eggplant parmajon` with fatfree cheese. Good luck!

    Insalata Caprese is easy to make and healthy, you just slice fresh mozarella and tomatoes into rounds, place the tomatoes on a plate and lay the mozarella over the tomatoes. Then drizzle with some olive oil and season with salt and pepper. Then garnish with a basil on top.

    Tuscan bean soups are also easy to make and healthy, there are a number of recipes on the web.

    Lasagna rolls also make a beautiful presentation and can be lightened and healthy. Here's one for spinach:

    Oh don't forget bruschetta, it's a fairly healthy and easy to eat finger food.

    1 pound dried fettuccini, cooked to package directions

    1 T butter

    ¼ cup all purpose flour

    3 cups low fat or skim milk

    1 t salt

    ½ t pepper

    Pinch nutmeg
