Im on a diet but love choc muffins

does anybody have a recipe for homemade choc muffins that is as healthy as possible?

  1. Yes, it is possible! Although not with chocolate in them - sorry.

    Try this recipe -

    Makes 12 large or 15 medium muffins

    1/2 c raisins

    2 c flour (8.5 oz)

    1 c sugar (7 oz)

    2 tsp baking soda

    2 tsp cinnamon

    1/2 tsp ground ginger

    1/2 tsp salt

    2 c peeled, grated carrot (7 oz)

    1 large tart apple, grated (6-7 oz)

    1/2 c sweetened shredded coconut (1.5 oz) NOT the moist kind

    1/2 c sliced almonds or chopped walnuts (2 oz)

    1/3 c sunflower seeds or wheat germ (1.5 oz)

    3 large eggs

    2/3 c veg oil (4.75 oz)

    2 tsp vanilla extract

    Preheat oven - 375F.

    Grease muffin tin (or line with papers if freezing for later).

    Cover raisins with hot H2O and set aside.

    Mix eggs, oil, vanilla and set aside.

    Mix flour, sugar, baking soda, spices, salt.

    Add carrots through sunflower seeds or wheat germ. Mix well.

    Add egg-oil mixture and stir until combined.

    Add drained raisins and mix.

    Pour batter into muffin tin.

    Bake for 20-25 minutes.

    Enjoy!


  2. Use a whole grain or bran recipe and add a few chips if you must... better would be raisins, banana or apple bran muffins.

  3. Even if you did find a recipe it would never taste the same as your normal muffins...sorry but you must be strong & stick to the diet.


  4. Muffins are just really fatty and to make them good you have to use everything that makes them fatty,so no i don't think that can be done.

      (Try Googling -healthy muffins- see if that helps you)  

  5. Depending on what your definition of "healthy" is you can try these:

    Dark Chocolate Muffins

    1 dark chocolate fudge or devils food cake mix

    1- 15oz. can solid pack pumpkin

    Directions  

    Mix the two ingredients together.

    Don't add anything else that may be mentioned on the box, such as eggs, oil, or water.

    The mixture will be very thick and you will be tempted to add in other things to make the batter smoother. Don't.

    Place batter into muffin tins (or mini muffin tins) sprayed with non-stick spray (don't use paper, it will stick).

    Bake at 400 degrees for 20 minutes for regular muffins, 12 minutes for minis.

    Makes 15 regular or 36 mini muffins.

    1 serving = 1 Muffin or 3 Minis

    180 calories

    2.5g fat

    37 carbs

    2.5g fiber

    2.5g protein

    For something more "wholesome" and a little bit more effort (but still delicious):

    Natural Chocolate Muffins

    Makes 12-15

    2 tbsp cold water

    1/2 tbsp cornstarch

    1 1/4 cups whole wheat flour

    1/2 cup cocoa powder, sifted

    3/4 tsp baking soda

    1/4 tsp sea salt

    2 tbsp dark brown sugar

    2/3 cup applesauce

    1/4 cup organic olive oil

    1/4 cup honey

    1/2 tbsp vanilla

    2/3 cup skim or soy milk

    1/2 cup mini dark chocolate chocolate chips (optional)

    Whisk together cornstarch and water in a small dish, set aside.

    Whisk together flour, cocoa, baking soda and salt.

    In another bowl, beat together cornstarch mixture, sugar, applesauce, oil, honey, vanilla and milk.

    Add this to the dry ingredients and mix just until blended.

    Stir in chocolate chips, if using.

    Pour into sprayed muffin trays.

    Bake at 350 F for 13 minutes (regular sized muffins) or 10 minutes for mini-muffins.

    Also, go to the grocery store and where they have the cake mixes and stuff like that look for a low-fat chocolate muffin mix. I think Quaker might have one. Check it out! :)

  8. Bran muffins if you must have a muffin.

  9. Yeah have you tried Bran muffins? Or just try replacing a few of the ingredients?

    Like plain flour for brown flour.

    Switch to low fat butter & chocolate.

    Half the amount of sugar you use, or switch it for fruit sugar.

    Use fruit instead of chocolate- I reccomend banana or blueberrys.
