Healthy School Lunches for a picky eater??

I really don't eat any kind of lunch meat. And i love fast food - but I'm trying to eat healthy this year! I have always taken my lunch to school (I'm now in 11th grade, that's 12 years of packing lunch!) I'm desperate for some new ideas!!

  1. Its hard to break the fast food habit, but have you considered making your own favorites?  Here are some ideas:

    1.  Grilled hamburger patties (make several and freeze for later use); a slice of cheddar cheese; romaine leaves, sliced tomato, pickles (put your burger together right before you eat it); oatmeal cookies and baked chips.

    2.  Chicken tenders:  marinate boneless, skinless chicken b*****s overnight in Italian dressing.  Cut into strips and grill.  Make a dipping sauce out of your favorite bbq, honey mustard or ranch dressing. Eat with whole grain rolls or crackers, fresh fruit, and a brownie.

    3.  Soup:  mix a can of cream of potato soup with a can of clam chowder, 1/2 cup milk, 1/2 cup sour cream, and bring to a boil.  Pour into thermos and serve with crackers and your favorite cheese.Add celery and carrot stix with lowfat ranch dressing and a lemon bar for dessert.

    4.  French roll with mozarella cheese, sliced tomatos, grilled eggplant (season with garlic, salt, pepper and olive oil), and basil.  Enjoy a sparkling water with lemon and lowfat yogurt.  Have a fresh peach for dessert.

    5.  Lean roast turkey layered with jack cheese, green chili's on a toasted baguette.  Serve with grape tomatos and cucumbers and a blondie.

    6.  Tortilla rollups:  whole wheat flour tortilla with garlic and chive lowfat crream cheese, lean roast beef, romaine lettuce, and secured with a toothpick.  Serve with baked tortilla chips and strawberries.

    7.  Pita bread filled with hummus or falafel, tzaziki, cucumbers, and tomatos.  Serve with greek olives, feta, and cucumber salad.  Enjoy with oatmeal cookies.


  2. carrots, celery, broccoli, cauliflower, squash, zuchinni-  you can eat those raw.  There's some single serve containers of ranch dip you can tote to school.  There's also single serve containers of Jif peanut butter now.  cheese (cheddar, string, pepperjack, whatever) and crackers (especially whole grain).  Have you tried hummus?  It's in the deli section.  It's made from chick peas and olive oil.  Very yummy and good with veggies or crackers.  Bring plenty of fruit!
