I'm looking for some great dinner ideas that are healthy and are good tasting. It's kind of hard to find something that isn't blan. Any ideas?! Also recipes that don't consist of some crazy ingredients that you usually don't have laying around.

  1. you really have to recognize what kinds of foods you like that are healthy.  I personally like salads with vinegars in them.  You can also eat baked or grilled chicken.  what i would do is go to allrecipes.com and type in the ingredients you have and look for the lowest calorie dishes.

  2. 8 ounces 1/2-inch-thick steaks, such as rib-eye, trimmed of fat and cut into 2 portions

    1 teaspoon chili powder

    1/2 teaspoon kosher salt, divided

    1 teaspoon extra-virgin olive oil

    2 plum tomatoes, diced

    2 teaspoons lime juice

    1 tablespoon chopped fresh cilantro

    1. Sprinkle both sides of steak with chili powder and 1/4 teaspoon salt. Heat oil in a medium skillet over medium-high heat. Add the steaks and cook, turning once, 1 to 2 minutes per side for medium-rare. Transfer the steaks to a plate, cover with foil and let rest while you make the salsa.

    2. Add tomatoes, lime juice and the remaining 1/4 teaspoon salt to the pan and cook, stirring often, until the tomatoes soften, about 3 minutes. Remove from heat, stir in cilantro and any accumulated juices from the steaks. Serve the steaks topped with the salsa.

4 boneless, skinless chicken b*****s (1-1 1/4 pounds), trimmed (see Tip)

1/2 cup pecan halves or pieces

    1/4 cup plain dry breadcrumbs

1 1/2 teaspoons freshly grated orange zest

    1/2 teaspoon salt

1/4 teaspoon ground chipotle pepper (see Note)

    1 large egg white

    2 tablespoons water

    1 tablespoon canola oil, divided

    1. Working with one piece of chicken at a time, place between sheets of plastic wrap and pound with a meat mallet or heavy skillet until flattened to an even 1/4-inch thickness.

    2. Place pecans, breadcrumbs, orange zest, salt and ground chipotle in a food processor and pulse until the pecans are finely ground. Transfer the mixture to a shallow dish. Whisk egg white and water in a shallow dish until combined. Dip each chicken breast in the egg-white mixture, then dredge both sides in the pecan mixture.

    3. Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium heat. Add half the chicken and cook until browned on the outside and no longer pink in the middle, 2 to 4 minutes per side. Transfer to a plate and cover to keep warm. Carefully wipe out the pan with a paper towel and add the remaining oil. Cook the remaining chicken, adjusting the heat as needed to prevent scorching. Serve immediately.

    ______________________

    1 teaspoon canola oil

    1 cup quick-cooking barley

    1 clove garlic, minced

    2 1/2 cups reduced-sodium chicken broth

    1/2 cup orzo

1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme leaves

1/4 cup chopped fresh chives or scallion greens

Salt & freshly ground pepper to taste

Heat oil in a medium saucepan over medium heat. Add barley and cook, stirring occasionally, until golden and toasted, about 5 minutes. Add garlic and cook, stirring, for 1 minute more. Pour in broth and bring to a boil. Add orzo and thyme. Stir once, reduce heat to low, cover and simmer for 10 minutes. Remove from the heat and let stand for 5 minutes to absorb any remaining liquid. Stir in chives (or scallion greens) and season with salt and pepper.

    1/2 cup quartered dried figs

    1/4 cup Marsala or port

    2 teaspoons honey

    1/2 cup part-skim ricotta

    1 teaspoon sugar

    1/8 teaspoon vanilla extract

    1 tablespoon toasted slivered almonds

Place figs, Marsala (or port) and honey in a small saucepan. Bring to a boil, reduce heat and simmer until the figs soften and the wine is syrupy. Stir together ricotta, sugar and vanilla. Divide between 2 bowls and top with the fig mixture and almonds.

  3. 1 can of black beans

    1 can of rotel

    heat em up

    add cooked rice

substitute low fat ground beef or turkey for any ground beef recipe.  Some of them go as low as 4% fat.

adding fresh garlic, and other fresh or dried spices/herbs and hot sauce can make up for a lot of flavor your missing from fat.

Also, the salad dressing packets add a ton of flavor without the fat to all sorts of foods, just don't add the oil or mayo or sour cream, just use them as spices.

  4. yes i am strugglin with this as well try mixing healthy foods with good tasting foods like mashed pototoes with corn and prepare foods in different ways to be more pleasing to taste buds
