Healthy dessert recipes?

Does anyone know any good recipes for dessert that are at least kind of healthy,

I especially like cookies, cakes, muffins, so anything along those lines

Fruity desserts are good.

Angel Food cake with Cool Whip or whipped cream and sliced strawberries or peaches, or blueberries .....  Fruit pies aren't that bad for you (except for the sugar);  and pumpkin, sweet potato and pecan pies have alot of good nutrients in them too.  Banana, pumpkin, apple, zucchini, carrot and cranberry breads and cakes would have some nutritional value too ..... bran muffins are good for you; and add some cinnamon & raisins.......Fresh, homemade ice cream with fresh fruit would have lots of calcium, besides the fruit

    2 cups flour

    1 ½ cups sugar

    2 tsp baking soda

    ½  tsp salt

    2 tsp cinnamon

    3 lg carrots, grated

    ½ cup nuts, chopped

    ½ cup coconut

    1 apple peeled and grated

    3 eggs

    1 cup oil

    2 tsp vanilla

    ½ cup raisins

    Mix dry ingredients together. Stir in carrots, raisins, apple, nuts and coconut. Beat eggs with oil and vanilla. Stir in to dry ingredients until combined. Fill greased muffin tins 2/3 full. Bake at 350 for 20 minutes.

    Banana Nut Bread

    1 ½ cups sugar

    ½ cup butter, melted

    3 bananas, mashed

    2 eggs, beaten

    2 cups flour

    ½ tsp baking soda

    1 tbs sour cream added to regular milk to make 1/3 cup

    ¼ tsp salt

    1 tsp vanilla

    ½ to 1 cup chopped walnuts (optional)

    Mix all ingredients together in a large bowl until blended well. Add chopped nuts, mix together. Pour into greased loaf pan about 1 inch from the top. Bake at 350 for 60 minutes.

    Hot Fudge Pudding Cake

    During the baking a cake layer forms on top and a rich chocolate sauce appears on bottom. Serve with vanilla ice cream or whip cream.

    1 cup Bisquick or biscuit/pancake mix

    1 cup sugar

    3 tablespoons plus 1/3 cup of unsweetened cocoa powder

    1/2 cup milk

    1 tsp vanilla

    1 2/3 cup hot water

    Powdered sugar (optional)

    Mix bisquick, 1/2 cup sugar and 3 tbs cocoa in a greased 8 inch square baking dish. Stir in milk and vanilla until well blended. Sprinkle evenly with remaining 1/3 cup cocoa and 1/2 cup sugar. Pour on water. Bake in preheated 350 F oven for 40 minutes or until top is firm. Dust with powdered sugar. Serve at once in bowl with sauce spooned over cake. Make 6 servings.        


  7. TWINKIE PUDDING DESSERT

    1 box twinkies

    1 box vanilla pudding

    1 cup milk

    1 can cherry pie filling

    1 large cool whip

    Cut twinkies in half, layer in bottom of pan. Mix pudding according to directions. Pour over twinkies. Add cherry pie filling and finish with cool whip.

    Refrigerate before serving

    HAI STICKY RICE WITH MANGO DESSERT

    2 cups glutinous (sticky) rice, soaked in cold water for at least one hour and drained

    1 1/4 cups coconut milk, canned or freshly prepared

    pinch of salt

    2 tablespoons of sugar

    2 large ripe mangoes, peeled and sliced

    In a saucepan bring to a boil: rice, coconut milk, salt, sugar and 1 1/4 cup water. Stir. Lower heat and simmer, uncovered, about 8-10 minutes until all the liquid is absorbed. Remove from heat. Cover and let stand 5 minutes.

    Transfer rice to a steamer or double saucepan and steam 15-20 minutes over boiling water, until rice is cooked through.

    Mold the cooked rice into individual ramekins or small cups lined with plastic wrap. Cool to room temperature. At serving time unmold onto a plate and top with mango or even strawberries.

    HEALTHY CHEESECAKE COOKIES

    18 vanilla wafers

    1/2 c. honey

    2 (8 oz.) light cream cheese pkg.

    1 tbsp. lemon juice

    1 tsp. vanilla

    2 eggs

    18 (2 1/2 inch) baking cups

    TOPPING:

    1 c. strawberries, sliced

    1 tbsp. honey

    1/4 tsp. cinnamon

    1 tsp. vanilla

    Beat until creamy all ingredients except vanilla wafers and topping ingredients. Place 1 vanilla wafer into the bottom of each baking cup and place in muffin tins. Fill each cup 3/4 full and bake for 15 minutes at 375 degrees. Cool. Add small amount of strawberries to each and refrigerate until ready to serve.

    STRAWBERRY CHEESE SALAD

    1 pt. strawberries (healthy pt.)

    2 tsp. lemon juice

    2 tbsp. sugar (also healthy)

    4 (3 oz.) cakes cream cheese

    1/2 to 1 c. whipping cream

    Wash and stem berries. Crush with sugar. Add lemon juice. Mix small portion at a time with softened cream cheese until well mixed. Fold in whipped cream. Pour into container and freeze. Remove from freezer about 15 minutes before serving. Slice and put on lettuce leaves.

    LEMON SAUCE WITH ANGEL FOOD CAKE

    1/2 c. sugar

    1 1/2 tsp. cornstarch

    1/2 c. water

    1/4 c. Healthy Choice Cholesterol Free Egg Product

    4 c. assorted fruit (such as sliced kiwi, berries, mandarin oranges or grapes)

    3 tbsp. fresh lemon juice

    1 pkg. (10 oz.) angel food cake (cut in 8 slices)

    In small saucepan, combine sugar and cornstarch. Gradually stir in water, egg product and lemon juice. Cook over medium heat, stirring constantly until sauce comes to a boil and thickens. Let cool. Top each cake slice with 1/2 cup fruit, drizzle with lemon sauce. Serves 8.

    FRUIT MUFFINS

    1 egg

    1/2 c. vegetable oil

    3/4 c. milk

    2 c. wheat flour

    1/3 c. sugar

    3 tsp. baking powder

    1 tsp. salt

    1 c. chopped fruit (peaches, apples, prunes)

    1/2 c. brown sugar (optional)

    Heat oven to 400 degrees. Use muffin cups or grease bottoms of muffin pans. Beat egg. Stir in oil, milk and fruit. Stir in remaining ingredients all at once, just until moistened. Batter will be lumpy. Fill muffin cups 3/4 full. Bake until golden brown, about 20 minutes.

  9. Just make a fruit salad, place it on a biscuit, and top with low fat whipped cream!
