Question:

Healthy diet and cooking tips

I am a student and I am living alone and I really want to keep healthy but I am a terrible cook, and I don't know how to keep organized about about keeping a healthy diet eg. 5 a day, and getting the right amount of vitamins and minerals as well as cooking.

Any advice would be much appriciated.

  3. Vegetables and whole grains, which should form the basis of a healthy diet, are SO easy to prepare that you don't need to worry about cooking skills. Roasted vegetables are absolutely delicious--cut up your vegetables (some of my favorites for roasting are eggplant, brussels sprouts, butternut squash, yellow squash, zucchini, potatoes) into bite-sized chunks, spray them with a no-calorie cooking spray (or drizzle with olive oil if you don't mind the calories--otherwise, olive oil is very heart-healthy), spread in a single layer on a baking sheet, and bake at 450 degrees for 20 minutes.

    I roast vegetables a few nights a week and then serve with grilled chicken or fish, or mix the vegetables in with whole wheat pasta, brown rice, quinoa, or couscous...all of which are incredibly easy to prepare. If this is a little too dry for you, I would recommend tossing some low-sodium, canned, diced tomatoes with the vegetables and the grains.

  4. Depending on how big your fridge is, keep it stocked with fresh veggies and fruits.  If you have a stove/oven...try grilling marinated meat(cheaper cuts of chicken, beef etc) and cut into strips.  Serve with rice or noodles and freeze leftover meat.  A light dressing works as a gravy.

  5. Eat a variety of fruits vegetables grain and eat a little meat, eggs or dairy.

    One way to think about getting the right nutrients is to think about the colors of the food you are eating.  You need to eat colorful meals.  So have some green, orange, white and a little brown (like meat).

    If you sat down and had mac and cheese, carrots and yellow squash, that would be boring, wouldn't it?  All orangey-yellow.  It would be more appealing to eat mac and cheese, green beans and maybe tomato slices or a vegetable salad.  The idea is that the colors represent different vitamins and minerals in the foods.
