What are some healthy foods that are fun to make AND eat? I'm trying to loose weight, but I love cooking/ baking. I love making cakes and fried ice cream is by far the most fun thing I like to make. Any suggestions for some healthy foods? Especially stuff that is challenging and stuff that I can make pretty/ artsy.

  1. Egg-White Crepes

    "Berries provide the filling for these simple crepes using whole wheat flour, egg whites, and skim milk."

    INGREDIENTS:

    1/2 cup whole wheat flour

    2 egg whites

    1/2 cup skim milk

    1 pinch salt 1 tablespoon vegetable oil

    1/2 cup mixed frozen berries,

    thawed and drained

    1 tablespoon confectioners'

    sugar for dusting

    DIRECTIONS:

    1. Whisk together the wheat flour, egg whites, milk, salt, and oil in a large bowl until smooth.

    2. Lightly coat a skillet with cooking spray and place over medium heat. Pour 1/4 cup of the batter into the skillet. Tilt the pan in a circular motion to allow the batter to spread to the edges. Cook until the bottom is light brown, about 2 minutes. Flip the crepe and place 2 tablespoons of the mixed berries in the center of the crepe; cook another 2 minutes. Fold the crepe in half and remove with a spatula to a serving plate. Dust with confectioners' sugar and serve.

    Autumn Apple Salad

    INGREDIENTS:

    4 tart green apples, cored and

    chopped

    1/4 cup blanched slivered

    almonds, toasted 1/4 cup dried cranberries

    1/4 cup chopped dried cherries

    1 (8 ounce) container vanilla

    yogurt

    DIRECTIONS:

    1. In a medium bowl, stir together the apples, almonds, cranberries, cherries and yogurt until evenly coated.

    INGREDIENTS:

    1 tablespoon olive oil

    1/2 medium onion, chopped

    2 bay leaves

    1 teaspoon ground cumin

    2 tablespoons dried oregano

    1 tablespoon salt

    2 stalks celery, chopped

    2 green bell peppers, chopped

    2 jalapeno peppers, chopped

    3 cloves garlic, chopped

    2 (4 ounce) cans chopped

    green chile peppers, drained 2 (12 ounce) packages

    vegetarian burger crumbles

    3 (28 ounce) cans whole

    peeled tomatoes, crushed

    1/4 cup chili powder

    1 tablespoon ground black

    pepper

    1 (15 ounce) can kidney beans,

    drained

    1 (15 ounce) can garbanzo

    beans, drained

    1 (15 ounce) can black beans

    1 (15 ounce) can whole kernel

    corn

    DIRECTIONS:

    1. Heat the olive oil in a large pot over medium heat. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers. When vegetables are heated through, mix in the vegetarian burger crumbles. Reduce heat to low, cover pot, and simmer 5 minutes.

    2. Mix the tomatoes into the pot. Season chili with chili powder and pepper. Stir in the kidney beans, garbanzo beans, and black beans. Bring to a boil, reduce heat to low, and simmer 45 minutes. Stir in the corn, and continue cooking 5 minutes before serving.

    Crispy Barbequed Tofu Slices

    "Sliced tofu is dipped in egg whites, floured, fried, coated with bbq sauce and grilled. My husband and two year old son love this recipe!"

    INGREDIENTS:

    1 (16 ounce) package extra

    firm tofu

    3 tablespoons olive oil

    1 egg white

    1 tablespoon barbeque sauce 1 cup all-purpose flour

    1 teaspoon salt

    1/2 teaspoon pepper

    1 cup barbeque sauce

    DIRECTIONS:

    1. Drain tofu, and slice into strips. Place in a plastic bag or container, and freeze overnight. This will give the tofu a meatier texture. Thaw tofu strips, and blot with paper towels to dry.

    2. Heat olive oil in a large skillet over medium heat. In a small bowl, whisk together the egg white and 1 tablespoon of barbeque sauce. Combine the flour, salt, and pepper in a separate bowl. Dip the tofu slices into the egg mixture, then into the flour mixture, shaking off excess flour. Fry in the hot oil for about 1 minute on each side, until golden brown. Just fry enough at one time so they are not crowded. Remove from the oil to paper towels to drain and cool.

    3. Preheat the oven's broiler. Brush tofu slices with additional barbeque sauce, and allow to marinate while the broiler heats up. Arrange them on a broiler pan, or wire rack set over a cookie sheet for best results.

    4. Position the oven rack about 6 inches from the heat source. Broil for 5 minutes on each side, or until browned and crisp, watching closely so as not to burn them. Serve warm with the remaining barbeque sauce for dipping.

    Roast Potatoes

    "Simple and delicious recipe for rosemary-kissed roasted red potatoes."

    INGREDIENTS:

    2 pounds red potatoes, cut into

    quarters

    2 tablespoons vegetable oil

    1 teaspoon salt 1/2 teaspoon freshly ground

    black pepper

    1/2 teaspoon dried rosemary,

    crushed

    DIRECTIONS:

    1. Preheat oven to 450 degrees F (250 degrees C).

    2. Place potatoes in a large roasting pan and toss with oil, salt, pepper, and rosemary until evenly coated. Spread out potatoes in a single layer.

    3. Bake in preheated oven for 20 minutes, stirring occasionally.  Serve immediately.

    Box of Raisins

    Use a knife to spread Peanut Butter in crevaces of celery sticks

    Arrange Raisins atop Peanut Butter

  3. Everyone loves chicken right.. well I hope you do heres a few...( I have the same problem and tried this)

    Chicken, Mushroom and Cheese Omelette

    Ok crack like 2 large eggs, stir

    Add in pieces ( bite sized) of alredy cooked chicken

    Add mushrooms

    Minced tomatoes

    Sea salt, Ppr, Chili Powder.

    Add all this in and add to oiled pan flip when starts to look fluffy.

    And enjoy

    Shrimp and Linguine

    Add shrimp to oiled pan

    Add minced tomatoes half tomatoe

    Minced or chopped garlic about 2-3 cloves

    lemon juce

    seafood seasoning

    a bit of peper ( couple shakes)

    let shrimp turn to its color

    When linguine is finished cooking add pasta to shrimp and add a cup of chicken broth and let it all circulate.

    Add a salad... with olive oil, tomatoes. cucumbers and pepper.

  5. When making a lettuce salad there are a lot of nibbles you can eat as you go. Celery, Carrots,Tomatoes Egg chunks Cucumber diced meat.
