  2. Vegan Waffles or Pancakes

    Ingredients:

    1 ripe banana, mashed

    2 cups water

    1/2 cup uncooked oatmeal

    1 1/2 cups whole-wheat flour

    2 teaspoons baking powder

    1 teaspoon cinnamon

    1 teaspoon nutmeg

    vanilla extract to taste (optional)

    Method:

    Mix together the mashed banana and water. Add dry ingredients and mix, leaving lumps in the batter. Waffles: Cook on a waffle iron, according to the manufacturer's instructions. Pancakes: Pour 1/2 cup of batter into a hot, lightly oiled frying pan. When bubbles rise through the middle of the pancake and break on the top, flip the pancake and cook until browned underneath. (Note: Test the pan before cooking the pancakes by throwing a few drops of water onto it. If the water jumps around and then disappears, the pan is at the correct temperature.)

    Serve for breakfast or dessert; add margarine and top with sweet syrups, fruits, or preserves. Great with coffee.

    Notes:

    This recipe takes less than five minutes to prepare, not including cooking time.

    You must leave lumps in the batter. Waffle or pancake batter which is too smooth will spread out very thin on the waffle iron or pan, and the result will be a rubbery, tough cake.

    The batter doesn't freeze well but can be refrigerated for a short time. Waffles can be made in large quantities and frozen for future use; this is a good option if your waffle iron is small!

    Pancake suggestion: Put small slices of banana or apple onto the top of each pancake before flipping, and dribble a small amount of batter onto the pieces of fruit. Finish cooking the pancake according to the recipe, and call the result "Dad's World Famous Banana/Apple Fritters" (can you tell this was a family tradition?).

    As shown, recipe makes roughly four waffles; the number of pancakes will vary according to size. Recipe can be doubled.


  3. Apple-Cinnamon Swirl Pancakes

    Pancake Batter:

        * 1 1/4 cups unbleached flour

        * 2 tablespoons sugar

        * 2 teaspoons baking powder

        * 3/4 teaspoon salt

        * 1/8 teaspoon cinnamon

        * 1 1/3 cups almond milk or soymilk

        * 1/2 tablespoon egg replacer powder* mixed with 2 tablespoons water

        * 1/4 cup chopped walnuts

    Cinnamon-Apple Swirl Batter:

        * 2 tablespoons prepared batter (above)

        * 2 tablespoons natural apple sauce

        * 1 teaspoon cinnamon

    In a large bowl, mix flour, sugar, baking powder, salt, and cinnamon. Add almond (or soy) milk and egg replacer mixture and stir just until flour is moistened. (For thicker pancakes, use only 1 cup milk.) Let the batter rest for 5 minutes while the skillet heats.

    While the batter is resting, combine all of the "swirl" ingredients, using 2 tablespoons of the prepared batter.

    Heat a non-stick griddle or skillet (sprayed lightly with non-stick spray) over medium heat until a drop of water sizzles. Gently stir the walnuts into the batter. Pour batter by scant 1/4 cupfuls onto hot griddle. Immediately drizzle the cinnamon-apple batter over the top of each pancake in a swirl pattern. Cook until tops are bubbly and bubbles burst; edges will look dry. With a pancake turner, turn and cook until undersides are golden. Place on a warm platter; keep warm.

    Repeat until all batter is used, brushing griddle lightly with canola oil, if necessary, to prevent sticking. Serve pancakes with syrup or other topping as desired.

    Banana Flax Pancakes

    Ingredients (use vegan versions):

        1 cup all purpose flour

        1/2 cup white whole wheat flour

        2 tablespoons sugar, brown sugar, or natural sweetener (I like to do half regular, half

        brown sugar)

        2 teaspoons baking powder

        1/2 teaspoon salt

        1/8 teaspoon ground cinnamon

        2 tablespoons ground flax seeds

        1/4 cup water

        1 1/4 cup rice or soy milk

        1 medium-size, ripe banana

    Directions:

    Preheat oven to 200 degrees.

    In a blender, blend the flax with the water until thick. Add the banana and the soy milk and blend until smooth.

    Mix all remaining dry ingredients in a bowl. Pour wet ingredients into the dry ingredients. Mix until just combined (it's really important not to over mix).

    Cook pancakes in a lightly oiled nonstick pan or griddle over medium heat. Cook on one side until small bubbles appear on top and edges are slightly brown, then flip and cook until other side is lightly brown.

    Keep cooked pancakes warm in the oven while you prepare the rest.

    Optional blueberry syrup:

    Take a small handfull of frozen blueberries, cover with desired amount of maple syrup, microwave, pour over pancakes. Yum!

    Golden Spice Pancakes

    1 cup unbleached flour

    1 1/4 cups whole wheat flour (I used white whole wheat; ww pastry flour is another good option)

    2 teaspoons baking powder

    1/2 teaspoon baking soda

    1/2 teaspoon salt

    1/4 teaspoon cinnamon

    1/8 teaspoon nutmeg

    1 pinch ground cloves

    1 teaspoon orange rind (freshly grated orange peel)

    1 1/2 cups orange juice

    1/4 cup golden raisins (optional)

    Spray a non-stick frying pan or griddle lightly with canola oil, and begin heating it on medium-high.  Meanwhile, mix all the dry ingredients (flours through cloves) and add the rind, juice, and raisins to a well in the center.  Mix briefly, just until combined (a few lumps are okay).

    When the skillet is hot, drop the batter by quarter-cupfuls and cook until the tops are beginning to bubble.  Turn and cook a couple more minutes until the underside is golden and the inside is cooked.  Serve immediately.
