its a german cheese, really moist, rich creaminess of camembert with the sharpness of blue gorgonzola. one of the mildest blue cheeses.

It is made by making the regular camambert and adding the gorgonzola culture to the midle of the cheese once partially age, as the cheese ages further the culutre grows and the mid portion of the cheese has the soft/creaminess of the gorgonzola, and the firm ripness of the camambert on the outer portion.

I am a former chef (20+ yr in Hotels) and used it frequently in many dishes and it is a nice eating cheese with fruit, but can be added to pastas & sauces, soups as a garnish and in salads for a dairy componant.
