  1. if you are worried about the alcohol, you can use any kind of sweet juice. If you can't find mirin but like the tenderizing effects of the alcohol, you can use plum wine. That's more chinese than Japanese, but you can find it in most grocery stores.

    Mirin is not that hard to find if you look around a bit- even Wal-Mart carries it where I live.


  2. Sounds like you have a recipe that uses mirin... instead of mirin replace it with pineapple juice... or brown sugar... even regular sugar to get the sweetness.

  3. i use shoyu(soy sauce), sugar, garlic and ginger.  i know the person above me already gave you the recipe...i just have to add that you can use it for other things besides beef.  like chicken.  oh, and you don't need to heat the sauce...we never did because that extra time was needed to do other stuff in the kitchen.

If you have a recipe that calls for mirin, but you can't find it, the easiest thing to do is substitute an equal amount of plain sake or dry white grape wine--these are much more readily available. These substitutes aren't as sweet as mirin, however, so you may want to add a couple extra tablespoons of sugar to compensate. This is what we do at my house.

  5. 2 parts shoyu (soy sauce) to 1 part brown sugar (or honey)

    smashed garlic cloves

    smashed fresh ginger

    dash of sesame oil

    chopped green onions

    Boil til the sugar is dissolved. Add more sugar or shoyu until you get the desired sweetness.

  6. Here's one for beef...

    ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~...

    1 3/4 c. soy sauce

    1/2 c. sugar

    1/2 tsp. crushed garlic

    1  TBSP. grated fresh ginger root

    ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~...

    Combine these ingredients in a pot and heat until sugar is melted, cool.

    You can pour this over the meat of your choice and marinate for a couple of hours.

  7. i think you can use sherry to substitute mirin.
