Help! I need recipes --- and fast!

Ok well, my moms gone for the whole month and I don't want to eat my sisters food... cuz well... she can't cook. And I don't want to spend all my money on instant food. I need quick and easy recipes... by "easy", I mean the stuff a 14 year old can make.

Oh and... I'm a vegetarian..

  1. Here is a good salad recipe:

    LAYERED LETTUCE SALAD

    1/2 head lettuce, coarsely shredded

    1 can water chestnuts, drained & chopped

    1 c. celery, chopped

    1 c. green pepper, chopped

    1 - 17 oz. can Lesueur small peas - drained

    1-1/2 c. mayonnaise

    1-1/2 t. sugar

    1 can bacon bits

    1 c. shredded cheese

    Layer in bowl as follows:  lettuce, water chestnuts, celery, green peppers, & peas.  Spread mayonnaise evenly over top.  Sprinkle with sugar, then cheese & bacon bits.  Cover tightly & chill for 8 hours or overnight.  This salad keeps well.

    Note -- I substituted water chestnuts for 1 c. onions called for in the original recipe as we don't care for onions.  Also, if you don't care for celery or green peppers, then shredded carrots could be substituted instead.

    Also, why not cook yourself some canned veggies?  Get a can of your favorite vegetable.  Open it, and put it in a microwave safe bowl.  Add a bit of margarine if you want, or soy sauce or malt vinegar, or just some salt and pepper.  Microwave for 5 - 8 minutes.  Eat and enjoy.

    Do you like baked potatoes?  They are real simple to microwave.  Wash the potato, and prick it all over with a fork.  Put it on a microwave safe plate, and microwave it as follows:

    small potato - 3-4 minutes

    medium potato - 4-5 minutes

    large potato - 5-7 minutes

    Go for the shortest time first, and if it doesn't seem done all the way thru, microwave it more in 30 second to 1 minute times till done.  Top as desired and enjoy.


  2. 1. slice up an apple- I use one of those slicer/corer things & smear each slice with peanut butter.  put on a paper plate (cuz its easy to clean up) and eat it in front of the TV!  Lunch is served.

    2.  bread, spread with a little mayo (or skip it if you want), put some sliced cucumber on the bread (the mayo helps it stick), top with a little tomato, sprinkle with some pepper and top with another bread slice.  Cheap and easy.

    3. spaghetti noodles, cook in boiling water for 10 minutes.  While it's cooking, heat up some Classico (whatever brand you like, or your mom leaves behind) spaghetti sauce in a bowl in microwave for 2 minutes.  Drain the noodles, add the sauce  sprinkle with some parmesean cheese if you have any in the fridge.  Have some bagged salad with it if you want.

    4.  Get some frozen edemame (soy beans).  Heat in the microwave like it says on package but minus a minute or two (they always want you to overcook them!).  Let em sit while you slice up a cucumber and a little bit of onion (just a chunk off the side of an onion is enough).  Add the cuke & onion & a dash of salt & some regular white vinegar.  Eat both & have a boiled egg too.
