Help! I need to find an amazing buttercream or cream cheese icing recipe for wedding/birthday cakes. ?

I love Publix buttercream in Florida, I am essentially looking for a recipe from a proffessional cake decorator, that is not too sweet, but is light, fluffy and tasty. Any help will be greatly appreciated, as I am in a time bind

    I have my own little bakery and the recipe I use is:

    100g salted butter

    225g icing (powdered) sugar

    a couple of drops of vanilla extract.

    Make sure the butter is softened. Add the sugar and mix until light and creamy. Ad the vanilla and mix until smooth and well Incorporated.

    I always use salted butter as I think the saltiness of the butter really balances out the sugar. Most butter cream recipes call for unsalted but I find these butter creams to be too sweet and slightly powdery.

    You can add anything you want to it. For chocolate, reduce the sugar by 40g and add 40g cocoa powder. For really think fudge icing, add 50g melted chocolate. For wedding cakes, I always add a splash of rosewater to give a delicate, floral flavour.

  2. If you are looking for the whipped icing from the stores, you need Rich's better-cream icing. That is what I used in several major grocery chains. It comes ready whipped in piping bags, or ready to whip 1 qt. cartons. You can buy it at Gordon's Food Service. There is a way to locate a store near you, or the other website has shipping, I think. Follow the left side of the screen down to icings. They carry Rich's.
