Help! In charge of an office luncheon.....?

Somehow I ended up taking the lead of our party planning committee and have to plan a Tropical/Hawaiian themed luncheon at work.....for the Co President's birthday (otherwise wouldn't be freaking out!) and have 7 days to do it. Have a great committee, but we've run into a snag. Wanted to do a pineapple glazed ham as the entree, but none of the local delis are offering them right now and no one wants the responsibility of cooking one. We decided on a brown-sugar glazed ham, but want to add fruit somehow. Thought about a pineapple salsa or chutney, but can't find a recipe I like, and not sure that would really work anyway. thought about just throwing sliced pineapple rings on it, but is that tacky? Any suggestions are greatly appreciated!

I realize the ham isn't Hawaiian per se, but seafood is too costly for our budget. Any other entree suggestions?

  1. Instead of the rings and brown sugar, I'd use the long toothpicks with the frill on the end and stick in 2-3 things on each one all around the ham.  Each pick should have one large fresh pineapple chunk, and get the three different colors of green peppers and large green olives, maybe a 1" piece of banana, a red or green grape, maybe even a chunk of white cheese.

I like the pulled pork sandwich idea.  You can also substitute chicken for the pork (and buy a pre cooked rotisserie chicken).  Chicken mixed with a sweet and tangy bbq sauce and baked, shredded, topped on a good quality hard roll slathered with chutney (Major Grey's chutney, found in the condiment isle, is my favorite) and a scoop of cold coleslaw.

Since it's close to September and not the summer.  Don't do the Tropical/Hawaiin.  Do more a Bringing in Autumn theme.  Have a huge pot of chicken & rice with all the fall veggies as side dishes.  It will taste great and go alot farther than ham.  Everyone will love the veggies.  Also, you can make some Autumn desserts.
