Hi everyone..I am hoping someone out there can please help me with a recipe for homemade whole wheat pasta. I am specifically looking for one that does not require any white all-purpose flour and no egg yolks. Every recipe I find calls for both. Got any ideas? Thanks in advance.

  1. try this:

for every cup of flour, add 1 egg white.  Add enough water to make a very stiff dough. knead well.  cut into smaller  peices and roll thin.  cut into what ever shape pasta you want.  Dry well to store or drop into boiling salted water and cook till it done, about 3-5 minutes, starting the timer when water returns to a full rolling boil.

I normally don't add salt to my pasta recipes as it doesn't dry right for me.

  2. WHOLE-WHEAT PASTA

    Virgin olive oil

    3/4 lb. turkey sausage

    4 sm. leeks

    3 sweet red peppers

    Fresh garlic, to taste

    Fresh parsley, to taste

    Low sodium/low fat chicken broth

    Whole wheat spaghetti

    Grated Parmesan cheese

Serving suggestion: Serve with a dry, medium-bodied red wine.

Heat 2 tablespoons olive oil in saucepan. Remove sausage from casing, crumble into olive oil and saute. When sausage is half-cooked (about 5 minutes), add chopped leeks, diced red pepper, garlic and parsley. Simmer another 5 minutes. Add 1 tablespoon olive oil and 3/4 cup chicken broth. Stir, cover and simmer 5 minutes. Cook 8 ounces pasta according to package directions. Drain, add to sausage mixture and stir. Serve hot. Garnish with Parmesan cheese and fresh-ground pepper.
