Help With Dinner? (Vegetarian)?

well, i was looking at the main page and the new 'Featured Question' is this:

it has a TON of recipes... about 90% containing flesh-- YUCK! im new to this whole vegetarian thang, im just trying it out so im not good at the whole modifying recipes thing,a nd i have not too many recipes i can eat here (its basically moch burgers and stir-fry made with tofu here) and to make matters worse I make dinner for the entire family , so i have to mae a flesh dinner (YUCK!) for 4 PLUS a vegetarian dinner for me. it sucks. i want recipes that i can make in large, small or medium batches (halving/duubleind able recipes!) would be great!

i have these little tin things, that are like restaraunt tke-out containers, that i can place portions of things like vegetarian lasagnae in and freeze, warming/cooking in the oven (tin+microwave= BOOM!) so can anyone give me recipes/ directins for freezing/re-heating? thans, cooking 2 dinners EVERY nighs doesnt suit me well. but i guess if i cant find anything ya have to do what ya have to do... i just really wish someone can tell me something!! TY!=]

    Muter Paneer

    Ingredients

        * Paneer(Cottage Cheese) - 300 gms.

        * Green Peas - 275 gms.

        * Oil - 80 gms.

        * Onion - 175 gms.

        * Ginger Garlic Paste - 25 gms.

        * Yoghurt - 150 gms.

        * Red Chilli Powder - 1 tsp.

        * Coriander Powder - 1 tsp.

        * Tomato - 100 gms.

        * Cashewnut Paste - 25 gms.

        * Garam Masala(Mixture of spices like cardamom, clove, cinnamon, black piper) - 1/2 tsp.

        * Cream - 50 ml.

        * Green Chilli - 5 Nos.

        * Fresh Coriander Leaves - 25 gms.

        * Saffron - a pinch

        * Salt

    Method

        * Make a puree out of tomato in a blender.

        * Boil the onions in water for 8 minutes, strain and puree.

        * Take oil in a degchi and add boiled onion paste. Stir for 6 minutes and add ginger garlic paste.

        * Fry for five minutes and add red chilli and coriander powder. Stir and add tomato puree and salt.

        * Fry till oil leaves the masala, add yoghurt, beaten to a smooth texture and stir. Add little water, green peas and saffron.

        * Cook for 10-12 minutes till the oil leaves the masala. Add little water, green peas and saffron. Cook till green peas are tender.

        * Cut the fresh paneer into cubes and fry in oil till golden. Dip in cold water.

        * Squeeze the paneer and add to gravy.

        * Mix the gravy with cream.

    Serve hot garnished with fresh coriander leaves and slit green chillies
