    Antipasto Salad

    Deli Platters

    Veggie Platter

    Bake ahead, Baked Beans (they will stay hot and safe to eat for about 2 hrs. off the heat)

    Fruit Bowl or platter

    Pasta Salad with fresh Veggies with a Vinaigrette dressing

    Roasted Apples with Cinnamon, Nutmeg, butter and Brown Sugar

    Vegetable Chili

    Roasted Sweet Potatoes

    Pineapple Skewers, cold or hot, great with Pork!

  3. You can warm this one up if you cover it with foil.

    Baked Pork Chop & Sweet Potato Casserole

    Ingredients:

        * 6 lean pork chops, about 3/4-inch thick

        * salt and pepper

        * 3 to 4 sweet potatoes, uncooked, peeled and cut in half lengthwise

        * 2 medium onion, thinly sliced

        * 1 can (6 ounces) orange juice concentrate

        * 1/2 cup brown sugar

        * dash cinnamon

        * dash allspice or ground cloves

        * salt

    Preparation:

    Season pork chops with salt and pepper and brown lightly in a large skillet. Place pork chops in a baking dish; place sweet potatoes around pork chops; cover with onion slices. combine orange juice concentrate with the brown sugar and spices; pour over the pork chops and sweet potatoes. Sprinkle with salt. Cover and bake at 350° for 45 to 60 minutes, until chops and sweet potatoes are tender.

    Serves 6

  4. Take a look at these exquisite sides, so lovely with pork:

    Also get a good provision of ale beer to accompany them.

  5. You could make a big green salad with mixed greens, cherry tomatoes, thinly sliced red onions, mandarin oranges, avocado, mushrooms & dressing of choice.

    Tomato, cucumber, onion salad

    Deviled eggs

    Coleslaw

    Grilled peaches & vanilla ice cream

    Poundcake, strawberries & whipped cream

    Fruit salad

    Guacamole & chips

    If you have fire, you could bake potatoes.  Roll them up in tin foil.  Take along some sour cream, chives & butter.

    Rolls or garlic bread.

    Don't forget the marshmallows - s'mores.

  6. Deviled eggs are always a big hit - there never seem to be any left over, no matter how many you make.  Another idea would be BBQ beans.  Can use canned and doctor with BBQ sauce, brown sugar, etc.
