Help..i need to make hard candy FAST!!

ok heres the deal...i need to make fast candy..and i dont have any kinds of syrup.....so please help

  1. ENGLISH TOFFEE BARS  

    2 c. all-purpose flour

    1 c. packed light brown sugar

    1/2 c. butter

    1 c. pecan halves

    Toffee topping (recipe follows)

    1 c. Hershey's milk chocolate chips

    Heat oven to 350 degrees. In large mixer bowl, combine flour, brown sugar and butter; mix until fine crumbs form. (A few large crumbs may remain.) Press into ungreased 9x13x2 inch baking pan.

    Sprinkle pecans over crust. Drizzle Toffee Topping evenly over pecans and crust. Bake 20 to 22 minutes or until topping is bubbly and golden. Remove from oven. Immediately sprinkle chocolate chips over top; press gently onto surface. Cool completely. Cut into bars. About 3 dozen bars.

    TOFFEE TOPPING:

    In small saucepan, combine 2/3 cup butter and 1/3 cup packed light brown sugar. Cook over medium heat, stirring constantly, until mixture comes to boil; boil and stir 30 seconds. Use immediately.


  2. Candied Nuts

    Pre-heat oven to 325*

    While oven is pre-heating, place:

    1 stick of butter or margarine

    2 cups walnuts or pecans (chopped or whole)

    2 cups almonds slivered

    In a large baking pan (I use my turkey roasting pan).  Take out of oven when butter is melted.

    Meanwhile.

    Whip: 2 egg whites to stiff peaks

    Add: 1 cup sugar

    Pinch salt

    ½ cinnamon (optional-not in original recipe)

    Pour over nut and butter mixture in pan. Stir.  Stir every 15 minutes until egg mixture is dry (30-45 min total).  Let cool on wax paper.
