well a truffle is a type of mushroom or candy. and a proboscis normaly refers to a mouth (insect),trunk,or nose.

Considering i am not sure the context of the words involved from the before or after sentence could be a few things.

could be:

A sweet talker around (disgusting , know it all, or bad) mouthed people.

A nobleman (highclass person) among other (snotty nosed people as in people who think they are better then others)

problem is the "amongst other snotty" means they are using truffle in the same context as snotty, why the before and after context of truffle would be helpful. snotty probosci (s) would mean (bad,dirty, or snotty as in snobbish) mouth or nose.

There are tons of other ways you could flip it, and without prior or post sentence the meaning could be many things.
