Help plz i am throwing my grandma this big party? and i want to make pan de dulce?

my grandma is from mexico and i wanted to make it a mexican birthday party and i cant find the recipes on how to make the different kinds of pan de dulce from the mexican bakery. if anyone has any recipe plz share with me i have untill next month for this party if you dont ant to show you answer you can emai it to me at yesie_713@hotmail.com thank you

  1. There are tons of different kinds of Mexican Pan Dulce.  The most popular are probably Conchas, Orejas, Polvorones, and Ojos de Guey. The Polvorones are probably the easiest to make and would go great with some mexican hot chocolate (abuelita or ibarra brand are good)  I also included a recipe for horchata (mexican rice water) It'll go really well with your mexican theme!     CONCHAS:

    INGREDIENTS

    2 1/2 teaspoons yeast

    1/2 cup warm water

    1/2 cup evaporated milk

    3/8 cup white sugar

    1 teaspoon salt

    1/3 cup butter or margarine, melted

    1 egg

    4 cups all-purpose flour

    1/2 teaspoon ground cinnamon

      

    2/3 cup white sugar

    1/2 cup butter or margarine

    1 cup all-purpose flour

    2 teaspoons ground cinnamon

    1 teaspoon vanilla extract

    DIRECTIONS

    In a large bowl, stir together the yeast and warm water. Mix in the milk, 3/8 cup sugar, 1/3 cup melted butter, salt, egg and half of the flour. Gradually mix in the remaining flour, and 1/2 teaspoon cinnamon. Turn the dough out onto a floured counter to knead as soon as it pulls together enough.

    Knead for 6 to 8 minutes, until smooth and elastic. Place in a large greased bowl, and turn the dough to coat. Cover, and let rise in a warm place until doubled, about 1 hour.

    Make the topping while the dough rises. In a medium bowl, beat 2/3 cup sugar and 1/2 cup butter until light and fluffy. Stir in the flour until the mixture is the consistency of thick paste. Divide into two parts, and place one part in a separate bowl. Mix cinnamon into one half, and vanilla into the other half.

    When the dough is done rising, cut into 12 even-sized pieces. Shape into balls, and place on a greased cookie sheet, spacing about 3 inches apart. Divide each bowl of topping into 6 balls, and pat flat. Place circles of topping on top of the dough balls patting down lightly. Use a knife to cut grooves in the topping like a clam shell. Cover and let rise until doubled, about 45 minutes.

    Preheat the oven to 375 degrees F (190 degrees C). Bake for 20 minutes, or until lightly golden brown.

    PECAN POLVORONES

    Ingredients

    1 c Sugar

    2 1/4 c All-purpose flour  

    1/2 c Unsalted butter

    3/4 ts Cinnamon  

    1/2 c Lard

    1/4 ts Anise seed, finely crushed  

    1 Egg yolk

    1 pinch Salt  

    1 ts Vanilla

    1/2 c Pecans; finely chopped  

    1. Heat oven to 350F. Beat 3/4 cup of the sugar, butter and lard in large bowl of electric mixer on high speed until light and fluffy; about 3 minutes. Add egg yolk and vanilla; beat until smooth. Beat in flour, cinnamon, anise seed and salt until well mixed. Stir in pecans

    2. Roll walnut-size pieces of dough between palms to make round balls. Put remaining 1/4 cup sugar in pie plate; roll dough balls in sugar. Place balls 5 inches apart on ungreased cookie sheet. Press each ball with bottom of a glass dipped in sugar to about 1/4-inch thickness.

    3. Bake 10 minutes. Reduce oven to 300F and continue baking until lightly browned, 12 to 15 minutes. Remove to cooling rack.

    Test Kitchen Note: An additional 1/2 cup butter can be substituted for the lard. Also, you may bake the cookies at a constant 325F; cooking time should be about the same.

    Agua de Horchata (rice water) It's DELICIOUS - my family's recipe

    2 cups rice

    5-6 sticks cinnamon

    2 cans condensed milk

    1/4 cup sugar

    Water

    In a bowl, combine rice, cinnamon sticks and enough water to cover.  Let sit about 1 hour (enough for the rice and cinnamon to soften). In a blender, add softened rice & cinnamon mixture (including the water). Blend Well.  Pour mixture into a pitcher through a fine sieve or colander( make sure its fine or else the drink will be grainy).  Add condensed milk, sugar, and enough water to fill the pitcher (about 2qts.) Mix Well. serve chilled over ice.
