Help?? school starts on monday and I need some lunch ideas?!?

I"ve been a vegetarian going on 2 years...my parents ESPICALLY my dad is not supportive...and I need some ideas that use things that can be found in my kitchen?

HELP PLEASE!!

  1. I have the exact same problem!!!  My mom is understanding more, but my dad always tries to slip meat into my food, its very agitating!  Here's what i do (idk if its lactose intolerant though, sory if it isn't)

    Vegetarian tuna salad (sounds and looks nasty, but tastes AMAAZING!!)

    1) a cup or so of chopped celery

    2) mayo

    3) relish

    4) Mashed Chickpeas

    Idk on how many serving size, so just like put in what you think you'd eat and serve it on bread. There's a ton of different recipes on the web, and for lactose ppl too.  good luck!!!! Also just try googling vegetarian recipes...that's what i'm gonna do to mix it up for lunch next week!!  You do'nt have to stick to pb and j!

  3. OMG!!! EXACT SAME PROB!!!! If your lactose intolerant and veggie, aren't you vegan? Because that's wat I am. I bought a book called 'Vegan Lunch Box' at Borders. It gives you meat and dairy free lunches. Here's a really good link. http://www.veganlunchbox.com/

  4. This one is a favorite just because it’s so easy and I have it all the time.  It’s great for lunch.

    Use any canned beans-  pinto, red kidney, cannelloni (white kidney)

    Rinse beans well

    Then add whatever else is on hand-  mushrooms, bell pepper, carrots, squash, zuchinni, broccoli, cauliflower.

    Add enough Italian dressing to coat well and have about ¼ of the mixture sitting in the dressing.  Stick in frig for a couple of hours to soak up dressing.  Perfect easy meal and very nutritious.

    Pastas work well for lunch- spaghetti, mac & cheese, pasta salad with whatever veggies and Italian dressing, potatoes roasted with olive oil and rosemary, can you cook something the night before and bring it for lunch?  Like a stir-fry, veggies and rice, rice and beans.

    Baby Carrots (slice them if you have braces)

    Chips

    Granola bars

    If your teacher has a microwave, you'll be able to bring almost anything! If (s)he has a fridge, your options will increase a little.

  6. all sorts of nuts like pecans, walnuts, peanuts, peanut butter, veggies, rice cakes, fruits,( dried, fresh or canned) lettuce salad, 3 bean salads, dried cranberries, pickle or cucumber sandwiches or chickpea and kidney beans on bread. Hot air popped popcorn. Sorry you didn't tell us what was in YOUR kitchen. lol

Im vegan and in high school so my school has a microwave...Not sure if ur school has a microwave or not but what i do is bring a steamer bag full of veggies and a couple pieces of flavored tofu and pop it in the microwave. You can also bring vegitarian dry soup and just add hot water. Or make a sandwich with fresh cut veggies and some veg mayo (dont know if regular mayo is vegitarian cause i dont eat it) or lettuce and sandwich "meat". another idea is to make some brown rice or quinoa the night before and put it in a container with tofu/sietan/whatever and steamed veggies. or even just some brown rice and beans...Its ok to have stuff like pb&j once in a while but you dont want to have bad nutrition either...Good luck!

  10. PB & J is the good old standby when you have no other choice.  If you have whole grain bread use that instead of white to make it more nutritious.

    Fruit, whether its canned, frozen or fresh, makes a great addition.

    Hopefully your Father will come around because it's difficult being a vegetarian when you live at home and your parents don't support you.

    Stick with it.  Maybe that will show your Dad that you are serious.  Then he may decide to buy you vegetarian products.

    1 can beans, 1 C olive oil, l

    2-6 cloves garlic (depending on your taste)

    juice from 1/2 - 1 lemon (depending on your taste)

    salt & pepper (to taste)

    Blend until smooth in a food processor or blender.

    You can also add fresh flat-leaf (italian) parsley, if you like.

    Use this mixture as a spread on sandwiches or with raw veggies.

    I bought lunch a lot in high school. We always had pizza, pasta, build-your-own-sandwiches, a salad bar, and a taco bar that could be vegetarianized/veganized.
