I need some ideas for dinner, nothing that takes a long time, I don't get off until 4pm, and I like to eat before 7

  1. Super Taco Recipe

    A very easy Mexican dish sure to please anyone. Really quick too.

    Ingredients

    1 egg

    1/3 cup milk

    1 (6 ounce) package Mexican cornbread mix

    1 (8 1/2 ounce) can cream-style corn

    2 cups sharp cheddar cheese, shredded (devided)

    1 lb lean ground beef

    1 (1 1/4 ounce) package taco seasoning

    1 cup onions, chopped

    1 1/2 cups lettuce, Shredded

    1 cup chopped tomatoes

    1/4 cup black olives (optional)

    1/2 cup taco sauce or salsa

    1/2 cup sour cream

    1 avocado, diced (optional)

    Heat oven to 425°F Grease a 9 x 9" baking dish. Place in oven to heat. In small bowl, combine egg, milk, cornbread mix, 1 C cheese & creamed corn, mix well.

    Pour batter into baking dish & bake 20 - 25 minutes until golden brown.

    Saute the ground beef with the taco seasoning mix and 1/2 C onion until beef is browned and onion is tender, drain.

    Remove cornbread from oven.

    Slice into 9 squares.

    Place lettuce, tomato, onions, black olives, salsa, cheese, sour cream and avocados in individual small bowls and let every one top the cornbread with their desired toppings


  2. TACO SALAD

    1 can pinto or kidney beans, drained

    8 oz. shredded cheese

    1/2 iceberg lettuce, shredded

    1/4 sliced onion

    2-3 cut-up tomatoes

    salsa

    2-3 handfuls crushed tortilla chips

         Toss all together and enjoy!  You can also add sliced avocado, sliced black olives....

  3. if it's just you, make a nice salad with leafy green lettuce, sliced tomato and cucumber, chopped olives cheddar cheese, crumbled bacon or chopped ham and a sliced boiled egg.

  5. Every so often, I get the desire for a simple cream of tomato soup ( Campbells), made with milk and a grilled cheese & ham sandwich, made with swiss and good baked ham from the deli., some bread & butter sweet pickles and potato chips. Glass of sweet iced tea and ice cream for dessert!

  6. Umm what about like some grilled cheese. Its yummy. Or you could like buy tv dinners or some pot pies.. or these uncrustables there pb&J sandwiches yumm. or some hot pockets

  7. Try this recipe for great shrimp.

    Grilled Shrimp Skewers with Lemon Garlic Sauce

    18 large shrimp, peeled & deveined, tails on

    6 Bamboo skewers

    1/2 cup butter

    2 garlic cloves minced

    1 tbs fresh lemon juice

    zest from 1/2 lemon

    1/2 tsp salt

    1/4 tsp white pepper

    2 tbs chopped flat-leaf parsley

    Soak bamboo skewers in water for 30 minutes,

    prevents open ends from burning.

    Melt butter in sauce pan on low heat, add garlic,

    lemon juice and zest. Simmer 5 minutes. Stir

    in salt, pepper & parsley. Turn off heat.

    Thread 3 shrimp on each skewer, tails facing

    in one direction, leave a little space between. Brush

    lemon butter sauce on side you will place face down

    on grill. Cook 3 minutes. Brush sauce on side facing up,

    turn with tongs, cook 3 minutes. Remove from grill

    brush again with butter sauce....want the shrimp

    dripping in this sauce!

  8. How about a simple and healthy pasta with some garlic bread?

    Cooked pasta of choice and while hot just add chopped fresh tomato, some fresh chopped basil, olive oil, small cubes of mozzarella, chopped garlic and salt and pepper.  Toss into hot strained pasta.  sprinkle with grated parm or romano if you wish.
