  1. Appetizer (starter)-

    Bruschetta

    INGREDIENTS

1 French baguette, cut into 1/2 inch thick circles

    8 plum tomatoes, diced

    1 cup chopped fresh basil

    1/2 red onion, minced

    black pepper

    3 cloves garlic

    DIRECTIONS

    Preheat oven to 400 degrees F (200 degrees C).

Combine tomato, basil, and red onion in a small mixing bowl; stir well. Season with freshly ground black pepper. Set aside.

Arrange bread on a baking sheet. Place in oven, and bake until well toasted, approximately 5 minutes.

Remove bread from oven, and transfer to a large serving platter. Let bread cool 3 to 5 minutes. Rub garlic into the top of each slice of toast; the toast should glisten with the garlic. Spoon the tomato mixture generously onto each slice, and serve.

    Main course-

    Herb Butter Chicken

    INGREDIENTS

    4 skinless, boneless chicken b*****s

    1/2 cup butter, softened

    3 cloves garlic, minced

    1 teaspoon dried parsley

    1/4 teaspoon dried rosemary

    1/4 teaspoon dried thyme

    DIRECTIONS

Preheat oven to 350 and line a pan with aluminum foil.

Place chicken on pan. In a small bowl combine the butter, garlic, parsley, rosemary and thyme and mix together, then evenly spread a dollop of mixture on each chicken breast.

Bake in preheated oven, turning and frequently coating with remaining herb/butter mixture, for about 15 minutes or until chicken juices run clear.

    Dessert-

You can make these the day before.

    Mini Chocolate Lava Cakes

1 ½ cups semisweet chocolate chips

    1 stick butter

    1/2 teaspoon vanilla extract

    1/2 cup sugar

    3 tablespoons flour

    1/4 teaspoon salt

    4 eggs

    butter cooking spray

    1 tablespoon cocoa powder

8 strawberries, cut into slices- optional

Preheat the oven to 375 degrees F.

Microwave the chocolate and butter in the bowl for 2-3 minutes or until melted . Stir in vanilla.

In a large mixing bowl, combine sugar, flour and salt. Sift these into the chocolate and mix well with electric hand mixer. Add eggs one at time, fully incorporating each egg before adding the next. Beat at high until batter is creamy and lightens in color, approximately 4 minutes. Chill mixture for at least 2 hours.

Coat the top and each cup of the muffin tin with cooking spray. Dust with the cocoa powder and shake out excess. Spoon mixture into pan using a 4-ounce scoop or ladle. Bake for 10 to 11 minutes. Outsides should be cake-like and centers should be gooey. To remove: flip over tin onto a hard surface covered with wax paper. Top with strawberries.

*If serving, melt ½ cup of semisweet chocolate chips and then drizzle over muffins; sprinkle with powdered sugar.

  3. Hi there, you are so sweet for doing this for your parents! I would recommend a traditional italian meal. Yummy and super easy, and you can make the each course while they're eating. I would also recommend lighting candles and turning on a classical or billie holiday station www.pandora.com while they are dining. Tell them to relax and enjoy a leisurely four course meal.

    Garlic bread to start:

Caesar salad for the first course: (you can buy a bag of pre-prepped caesar or just chop romaine and toss with caesar dressing).

Cheese ravioli for the main course: Just boil ravioli in water, using directions on the package. Warm marinara sauce in a small pot, stirring occassionally. Serve topped with parmesan.

Strawberries & Chocolate for the dessert: Wash strawberries, pat dry with a kitchen towel. Arrange a few on two plates. Melt dark chocolate peices on very low heat in a non-stick pan stirring the whole time. Drizzle over strawberries when melted. For an extra pretty presentation sprinkle podered sugar on top.

    Have fun!
