Hey Guys... or Gals... need some SIMPLE recipes for boneless chicken breast.?

I'm a single guy with limited cooking equipment (no oven or stove). I have a Crock -Pot, and electric fry pan, and a microwave. My repertoire in the kitchen is pretty-much limited to frying or casseroles.

  1. If you prefer simple and sour taste, may be you can try some natural recipes.

    first, fried the chicken (whole boneless chicken breast o dice, wat ever you like) by your frying pan. a little bit oil will do.

    then, prepare some lemon juice (depends on you) with some salt and sugars. just mix o dip with your fried chicken.

  3. cajun chicken fingers

    combine 1 cup of cornmeal, 2 teaspoons of chili powder, 1 teaspoon of oregano, 1 teaspoon of salt, and 1/4 teaspoon of pepper in a large shallow bowl.

    beat 2 eggs in a seperate bowl

    trim chicken of fat and cut into strips (as big or small as you want)

    cover chicken with cornmeal mixture, then dip it into the eggs, then cover it in the cornmeal mixture again. once all the chicken strips are coated place them on a large plate.

    heat up 1/4 cup of vegetable oil in your electric fry pan (to medium or medium high)

    place half the chicken strips in the fry pan and cook for 5-6 minutes on each side.

    then heat up 2 more tablespoons of vegetable oil in the pan and place the remaining chicken strips in the pan and cook the same way as before.

    i made these once before and they aren't more spicy. if you like spicy foods add 1/2 teaspoon of chili powder

  4. Raspberry Balsamic Chicken

    1 teaspoon vegetable oil

    Cooking Spray

    1/2 cup red onion, chopped

    1/2 teaspoon dried thyme

    1/2 teaspoon salt, divided

    4 boneless, skinless chicken breast halves

    1/3 cup seedless raspberry preserves

    2 Tablespoons balsamic vinegar

    1/4 teaspoon pepper

    Heat oil in non-stick skillet coated with cooking spray over medium

    high heat until hot. Add onion and saute 5 minutes. Combine thyme

    and 1/4 tsp salt; sprinkle over chicken. Add chicken to skillet and

    saute 6 minutes on each side or until done. Remove chicken from

    skillet and keep warm. Reduce heat to medium-low. Add 1/4 tsp

    salt, preserves, vinegar, and pepper, stirring constantly until the

    preserves melt. Spoon sauce over chicken.  

  5. take the chicken and cut it up into small chunks.

    put the into a ziplock back with some teriaki sauce and place in the refrigerater for 2-3 hours( you dont have to do this but it keep the chicken moist and full of flavor otherwise chicken breast can become quite dry.)

    next turn you fry pan on high with some more teriaki sauce and anout 1 tablespoon of brown sugar.

    let that start to bubble and throw your chicken in and fry until chicken is cooked all the way through.

  8. chop chick breast add to crock pot with broth or bouillon cubes add egg noodles or rice and veggies instant chicken and noodles or soup if you do veggies and rice season as desired with season salt etc.do instant mashed in microwave for noodles optional
